LEMON AND RICE SOUP

We love to eat at a restaurant down in Nashville, Tn. called Demos. There are two in Tn. and they have some of the best food going. There is always a line but if you are ever in that area be sure and stop in. This is a recipe that is like the soup they serve there and you would think soup with lemon in it would not taste good but believe me it is delicious.


5 Cups Chicken Broth
5 Cups Water
5 Teaspoons Chicken Bouillon Granules
3 Carrots cut into small chunks
1 Large Onion peeled and chopped
4 Cups Cooked Cubed Chicken
1 Cup  Long Grain Rice, uncooked
3 Eggs
1/3 Cup Lemon Juice
1 1/2 Teaspoons Dried Oregano
Pepper to taste

In a soup kettle combine the first 5 ings. Bring to a boil.
Add the chicken and rice, reduce heat, cover and simmer
For 15 minutes or until rice is tender
Wisk together the eggs and lemon juice
Quickly stir into the soup. Add the oregano and pepper.
Simmer for about 5 more minutes.
Serve immediately. Good with french bread or oyaster crackers.

COUNTRY SUPPER

1 Lb. Beef Smoked Sausage, sliced in 2 inche pieces
3 Tablespoons Cooking Oil or a little more
4 Large Potatoes, sliced thin
3 Carrots, sliced thin
1/2 Cup Celery, sliced thin
1 Medium Onion, chopped
Salt and Pepper

Fry potatoes, carrots, onions, celery in a little cooking oil over low heat
Fry until light brown. Season with salt and pepper. Cover and let fry for 12 more minutes or until potatoes are done.

CUCUMBERS AND ONIONS

1/2 Cup Sour Cream
3 Tablespoons White Vinger
1 Tablespoon Sugar
4 Cumcumbers, sliced thin
1 Small Sweet Onion, thin sliced and seprated into rings
Pepper to taste
Combine sour cream, vinger, sugar and peppers.
Stir in cucumbers and onions. Cover and ref. for 4 hours
Serve using a slotted spoon

BLUEBERRY SOUR CREAM GELATIN SALAD

1 (15 oz.) Can Of Blueberries
1 (6oz.) Pkg. Lemon Gelatin
1 Cup of Sour Cream
1 Large Banana, diced

Drain blueberries, reserving syrup
Add water to reserved syrup to make it 1 1/2 Cups liquid
In a kettle add the gelatin and water mixture
Heat to boiling, stirring until gelatin is dissolved
Gradually blend the mixture into the sour cream
Then stir in the pineapple juice
Chill until almost set, will look like egg whites
Fold in the banana and drained blueberries
Put in a mold or dish and chill until firm
Serve on lettuce leaves with a teaspoon of
Miracle Whip on top if you like.

JENNIFERS COTTAGE CHEESE SALAD

This salad is mainly based on what ever amount you would like to make. My friend from church makes this and it is so good. Don't chop the vegs. up real big.
3 Tomatoes, chopped
2 Onions, peeled and chopped
2 Medium Cucumbers,  peeled and chopped
1 Medium Bowl of Cottage Cheese, small curds
2 Teaspoons Miracle Whip or Mayo
Salt, if you like

DIET CHICK-PEA SNACK

2 Cups canned Chick-peas, drained and rinsed
1/3 Teaspoon Garlic Powder
1/8 Teaspoon Red Pepper Flakes
Pam Olive Oil flavored Cooking Spray

Preheat oven to 350
Lightly coat a rimmed cookie sheet with the spray
In a bowl put the chick peas in and then mix the
Seasonings in another bowl then sprinkle over the
Chick Peas. Toss to coat. Then spread the chickpeas
In a single layer on the cookie sheet. Roast on the bottom
Rack or middle rack of the oven. Shaking pan every 15 min.
Or so. Roast for around 45 to 50 minutes. Do not let scorch.

COULD NOT RESIST THAT CHOC. GRAVY

After dieting all week I thought I had done real good until this morning. Being Sunday and snowed in my hubby just had to have a big breakfast. He wanted some choc. gravy. I had cleaned out my pantry and could not find my cocoa. I had some hot chocolate mix so I used it with some added flour and then the milk and it came out great. But what a temptation. That kettle was sitting there with some left in it and it looked so lonely just calling eat me, eat me so what did I do, I ate 4 teaspoons of it with some sprayed Parkey butter on top because choc. gravy is just not any good with out Blue Bonnet on top of it. I used Parkey this time. Now when I went to WW they say it takes 2 days to get back on track after you splurge. So now I have to lighten up for the next two days. Just have to eat more of that cabbage soup. Boy one thing about it, you sure don't need any laxative. It does the job for you without any meds. But to go all week without choc. is something for me and you can get away from popping choc. in your mouth every day. The more you don't eat the less and less you want it. But it is still like a drink, you just can't resist it hardly. Oh well tomorrow starts another week and less see how far I can get again.

SWEET BROCCOLI AND NOODLE SALAD

1 Head of Broccoli chopped into small florets
1 Medium Red Onion, chopped
11/2 Cup Shredded Cheddar Cheese
1 Box Colored Rotenni Noodles, drained
1 Cup Mayno or Salad Dressing
3/4 Cup sugar
3 Tablespoons milk

Cook the rotenni noodles, still keep firm, drain
Take the brocolli and cut up into bite size florets.  Chop the onion. In a bowl put the cooled rotenni noddles and the broccolli and onion. In another bowl mix the mayo and sugar together with the milk. Take and pour this in the noodle mixture. You can use more of the noodles and cheese and onion if you like to. Just make to your taste. Keep ref.

MY GRANDSONS JELLY SPREAD FOR BISCUITS

Everytime we have biscuits on the table my twin grandson's have to have this mix for their biscuits. Even good on toast. Just can't stop eating it.

1/2 Cup Grape Jam,  squeezable kind
1/4 Cup Promise Butter Spread or any butter spread

Mix this together and put on your toast or biscuits or eat it by itself. You may want to add more butter than this. Just work with it. It should be light grape color. Ref. leftovers. This is also good with strawberry jam.

CHIPS AND RAMEN NOODLES DISH

1 Pack of Beef or Chicken flavored Ramen Noodles
1 Bag Grippos Chips or BBQ chips
1 Can of Potted Beef or Chicken, drained
Hot Sauce to your taste

Boil Ramen noodles with out the seasoning pack until tender. Drain.
Crush the bag of chips and open it
Put the noodles and chips, seasoning pack, hot sauce and beef or Chicken in a ziploc bag. Zip it but get the air out. Mix this up in it and then
Pour into a bowl and eat. Real good.

VEG. AND PASTA SALAD

4 oz Pasta shells or other small pasta
1 15 oz. Can Red Kidney Beans, rinsed and drained well
1 12 oz. Can of Whole Kerneal Corn, drained
4 Green Onions, finely chopped
3 Green Chilis, finely chopped
1/2 Teaspoon ground Cumin
1 Teaspoon dried  Oregano
2 Tablespoons Lemon Juice
1/2 Cup Mayo
1/2 Teaspoon Salt
1/3 Teaspoon ground Pepper

Cook pasta according to directions, drain well. Then rinse and drain again. Drain the corn and beans and rinse. Combine the pasta, beans, corn and all other ings. Toss and ref. at least 2 hours before serving. If to dry can add more mayo.

CHIP OR VEG. DIP

8 Oz. Cream cheese
1/2 Cup Mayo
1 Teaspoon Worcestrshire Sauce
1/2 Teaspoon Onion Salt or Minced Onion
1/2 Teaspoon Garlic Salt
1/4 Cup Chili Sauce
Milk

Let cream cheese soften to room temperature. Blend together with a mixer the cream cheese and the mayo. Next mix in the other ings. Mix well and chill for 1 hour. Serve with chips or vegs.
If cream cheese is lumpy it is to cold try warming it a little in the mircowave and then blend it again. Better if left  for 24 hours to let the flavors blend. Keep ref.

SANDRA'S MICROWAVE FRIED POTATOS

If you like fried potatoes and don't want all the fat in them. Take and wash them and slice them. Salt and pepper them. Then take a ziplock bag and lay them in a single layer in it.  Put about 1 Tablespoon of water in bag and you can lightly spray them with cooking spray. Lay on a plate in the mircowave and let cook for around 10 minutes. Do not zip bag all the way up and watch when you take them out as you can get burned with the steam. Taste like real fried potatoes.

SANDRA'S BEEF LIVER AND ONIONS

2 LB. Beef Liver
1 Large Onion , sliced
Flour for Coating
Salt and Pepper
Oil for Frying

Slice onions up in a bowl. Set aside. Wash liver. Salt and pepper it. Put the liver in the flour then put in a skillet with the oil and fry. Turn to brown both sides. Fry until half-way done then take and put a piece of non-stick foil in the bottom of your crockpot . Lay some sliced onions on top of foil. Then put the liver on top of onions. Put more onions on top of this. Put lid on crockpot and don't take off while cooking as it lets the moisture out. Cook for about 3 hours or until done. Very tender.

SANDRA'S PORK CHOPS

This is a recipe from one of my friends I grew up with. She is a super cook and always has good recipes. This is a simple way to fix these and she said they were so moist.

4 or 5 Pork CHops
2 Beef Bouillon Cubes
2 Cups Water
2 Tablespoons oil
Flour for Coating

Take the bouillon cubes and dissolve in water. Set aside. Wash the chops and coat in flour. Put the oil in a skillet may take a little more and brown on both sides. Take out of pan and put in baking dish using the no stick foil on the bottom. Pour the broth over the pork chops and cover with foil. Let bake for around 1 hour or until done. Watch and don't let burn. They will fall of of the bone they are so tender.

Crockpot Chops:
Take and wash chops, brown on both sides. Salt and pepper them. Then take a piece of non-stick foil and put in the bottom of your crockpot. Lay the chops on it and turn on low. Let cook for about 3 hours. She said these are so moist they will fall of of the bone if you fix them either way.

HOW TO KEEP LETTUCE AND CELERY FRESH

My friend was telling me about this tip that she uses to keep her celery and romaine lettuce fresh.She said that this really works. So check it out.

For Romaine Lettuce:
Take and wash lettuce and cut off of stalk. Drain. Take and put  lettuce in a ziplock bag and lay a paper towel in the bag. Get the air out and seal. The towel keeps the moisture out she said.

For Celery:
Take and wash celery or don't wash your choice. Then cut it off of the stalk and into pieces. Do the same as with the lettuce. Put a paper towel in a ziploce back, seal and get the air out.
She says it will keep the lettuce crisp for over a month. I think you could also do the curley lettuce and head lettuce. Just take the stalks offf.

BAKED ORANGE ROUGHY FISH

6 Fliiets Orange Roughy
1/2 Cup Breadcrumbs
1/3 Cup Grated Parmesan Cheese
2 Tablespoons Molly McButter Sprinkles
1 Tablespoon Italian Seasoning
1 Tablespoon Olive Oil

Preheat oven to 400.
Combine bread crumbs, cheese, butter sprinkles and Italian seasoning in a bowl.
Brush fillets with olive oil and then coat evenly with seasoned breadcrumb mixture. Spray a cookie sheet and lay these on it. Bake until fish flakes easily with a fork and is done.

NON-ICE CREAM SHAKES

This shake is very good and does not use any ice cream.
1-1/2 to 2 Cups Of Ice Water
1 1/2 Cups Nonfat Dry Milk Powder
2/3 Cup Sugar
1/4 Cup Unsweetened Cocoa
1 Teaspoon Vanilla
1 to 11/2 Trays Of Ice Cubes
2 Tablespoons Corn Oil
I Squirt Of Non-Stick Spray This is for emulsification purponses

Place all of the ings. in the blender, including the oil and the non-stick spray. Use less water for a thicker shake and more water for shakes that are easy on your blender motor. The blender should be about 3/4 full. Place the lid on and blend for2 minutes. Pour into cups and serve. Makes 4, 12oz. servings. Make sure you follow the instructions to the tee.

Can add these for different flavors:
1 Tablespoon Instant Coffee For A Mocha Flavored Shake
1 Ripe Banana For A Banana Choc. Shake
3 Pieces Of Broken Peppermints For a Choc. Mint Shake Or Can Add A Mint Patty
Vanilla Shake: Reduce the sugar to 1/2 cup and add 1 Tablespoon Vanilla
Leave out the cocoa if making a vanilla shake.
Strawberry: Add some sliced Strawberrys and leave out the cocoa.

DEEP FRIED CATFISH

2 lbs. Catfish cut in 1-oz. strips
2 Cups Flour
3 Eggs, Slightly Beaten
4 Tablespoons Water
2 Cups Panko Bread Crumbs
Kosher Salt and Fresh Ground Black Pepper
Oil For Frying

Wash the fish and cut into the strips. Then beat the eggs and add the water to the eggs. Put the flour and bread crumbs in seprate dishes. Salt and pepper the fish then dip into the egg mixture then in the flour. Dip in egg mixture again and then in the bread crumbs. Deep fry in oil. Watch or they will scorch easy. Can use Lawery's seasoned salt instead of the kosher salt. But don't use as much or they will be to salty.

STEFENS TUNA SALAD

This is my sons Tuna Salad Recipe. Every time he come home he has to make some up for us. I just can't get it to taste like his even tho I use the same ings.

2 Medium Cans of Tuna
1/2 Small Onion chopped, if you like
3 Eggs, Boiled, chopped
4 Tablespoons Miracle Whip
1 Small Can of Chopped Black Olives, drained
1 Small Tomato, Chopped
Sweet Pickles, chopped or Pickle Relish to  your likeing
Crazy Mixed Up Salt

Drain the tuna, In a bowl put the tuna, onion, tomatoes. Then add the Miracle Whip. Stir good. Next add the pickles or relish and stir again. Now  add the olives. Stir. Next mix in the eggs so they will not crumble all to pieces. Then add the salt. The crazy mixed up salt to me is what makes this so good. Just work with this and adjust the ings. You may have to add more Miracle Whip. Keep ref. Serve on sandwich bread or regular crackers.

MAYRLIN'S SPAGHETTI CASSEROLE

1 Can Corned Beef, Mashed
1 Cup Milk
1 Can Mushroom Soup
Spaghetti, cooked and drained
1 Cup Cheddar Cheese
1 Tablespoon Prepared Mustard
3 Slices of Buttered Bread

Cook noodles and drain and sit aside.
In a bowl mix the mushroom soup, milk and mustard
Add 1/2 cup cheese
Add the mashed corned beef
Then add the noodles
Put in sprayed glass  baking dish
Tear up the bread and put on top of this
Add the other 1/2 cup cheese
Bake for 30 minutes on 350

Can add curtons on top instead of bread

HURRICANE CAKE

I ate this at a resturant a long time ago and had looked for years for this cake recipe and finally found one about 5 years ago for it.

1 1/2 Cups Sugar
2 Cups Plain Flour
2 Teaspoons Baking Soda
Dah Of Salt
2 Eggs
2 Cups of Canned Peaches with juice
1/2 Cup of Packed Brown Sugar
1 Cup Walnuts

Sift together the first 4 ings. together
Beat in eggs and peaches
Pour into sprayed 9x13 pan.
Mix Brown sugar and Walnuts together and sprinkle over batter
Bake 325 for 40 minutes
Spread iceing over cake while hot

Iceing:
3/4 Cup Brown Sugar
1 Stick of Butter
1/2 Cup Evaporated Milk
1 Cup Flaked Coconut

Combine the first three ings. in a saucepan. Cook for 4 minutes. Take off of stove and add the coconut. Watch or this will scorch easy. Punch holes in cake. Pour over cake when it comes out of the oven. I think this is better with two recipes of the iceing. This to me is what makes the cake.

CHICKEN AND MUSHROOMS

1 Or 2 Skinless Chicken Breasts
Onion Salt
Seasoned Salt
Pepper
1 4oz. Can of Mushroom pieces with juice
1/4 Cup Instant Rice
1/2 Cup Of Frozen Vegies

Season the chicken breasts with the onion salt and seasoned salt , watch the seasoned salt or it will be to salty. Then add the pepper. Use a 8x8 glass sprayed baking dish. Lay the rice on the bottom of the sprayed dish.
 Next add the vegies. Then add the chicken. Last put the mushrooms over top of the chicken. May take two cans. Put foil on top and bake at 350 for
1 1/2 hours or until chicken is done. You can also make foil packets out of this recipe.

ANGEL BISCUITS

ANGEL BISCUITS


5 Cups Self-rising Flour
1/4 Cup Sugar
1 Teaspoon Baking Soda
3/4 Cup Shortening
2 Envelopes Dry Yeast
1/4 Cup Warm Water
2 Cups Buttermilk, at room temp.

Sift flour, baking soda and sugar in a large bowl. Cut the shortening until
crumbly. Dissolve yeast in warm water. Add yeast and buttermilk to flour mixture and mix well. Spray 2 mini-muffin pans. Fill pans leaving some space for the biscuits to rise. Allow to rise for 20-30 minutes. Bake for 5 to 10 minutes on 350 until golden brown. Don't let burn on bottom. Serve with butter.

EDNA'S ROAST AND NOODLES

1 Small Beef Roast, cooked until done
Salt To Taste
1 Bag Medium Sized Egg Noodles
2 Sticks of Blue Bonnet Marg.

Fix the  roast until done. Cut into small pieces.
Fix the egg noodles, add a little salt to the water, not a lot.
Then pour the water off and add the butter to them. Start with one stick of butter. Just taste this. Add the roast to this you do not have to use all of the roast just to your liking. The more butter the better it is. You can also use chicken or steak to this instead of the roast.

LOU'S BUTTERMILK-VANILLA FRIED CHICKEN

My neighbor was telling me this new recipe for chicken she had fixed. She said it was real good. My mother-in-law said it was  good and crisp.

4 or 5 Chicken Legs or Thighs or Breasts
2 Teaspoons vanilla extract
2 Cups Buttermilk
Flour
Cornmeal
Salt and Pepper
Cooking Oil

Mix the flour and cornmeal together and set aside. Then mix the buttermilk with the vanilla and set aside.
Wash the chicken, then salt and pepper it.
Dip it in the flour mixture and then put it over in the buttermilk mixture and fry in a skillet on medium until done.
Make sure you put it in the buttermilk mixture last. Watch or it will scorch easy. Have not made this yet but I am going to try it.

BRENDA'S MEATLOAF

2LB. OR 3 LB. Nothing Less Of Ground Chuck
1 Pack of Meatloaf Seasoing Powder, like in a brown gravy pack
1 Small Can Of Tomato Sauce like Hunts
1/2 Green Pepper, Chopped
1 Small Onion, Chopped
2 Eggs Beaten
3 Pieces of Sandwich Bread Tore Up
6 Crackers, crushed
Salt and Pepper, do not add a lot of salt as the seasoning pack has it in it.
1/3 Cup Of Milk
1 Tablespoon of Cooking Oil

Topping:
1/3 Cup Of Brown Sugar or to your liking
1 1/2 Cups Ketchup
Or You Can Just Put Ketchup All Over The Top

In a bowl put the beef, season pack and mix good. Add all of the rest of the ings. Mix good with hands.
Take a piece of alumium foil and put in the bottom of a 9x12 pan. Take the spoonful of oil and pour in the middle of this. Take a paper towel and spread this all over the bottom of the pan as this will keep it from burning. Put the meat loaf in the pan and shape. I do not let mine touch the sides.  Bake on 350 for about a hour covered with sprayed alumium foil. May take longer. Just test it. Pour off the juice. Watch or it will slide out. I use a plastic baster to get it up with and then put the juice in a bowl. That way it want slide out of the pan or you can just dip it out with a spoon.

Make up the topping and pour over it and then bake for about 10 minutes on the bottom shelf. Uncovered. Watch or it will burn easy. If you use the Ketchup as a topping I put mine on when it is half way baked. I still leave it covered until almost done and then I take the foil off. But it will also burn on top easy so just watch it. This is good for a sandwich cold on sandwich bread with mustard on it.

THE ROTTEN EGGS AND THE CHURCH PEOPLE

Years ago when my dad was a young boy they did not have tv's or computers to keep them company and boy were just boys into every thing going and loved to create mischief. This is back when the T-model Fords had came in use and people went to church on Sunday's in wagons or rode a horse. If you were one of the lucky ones you could ride in your Ford. You did not have that many clothes to change into and had to take care of what you did have and no shoes to change into but one pair of Sunday shoes and a pair of work shoes and you had to take care of them also. So your Sunday worship dress and pants was looked upon with pride. It was the best you had and sometime maybe it had patches or little sitches sewed real fine in them.
 This group of boys that my dad ran around with loved to nag the church people as they went to church and to me they treated them terrible.They would see them coming and have a bunch of rotten eggs hid and when they came by in the cars or buggys they would throw them at them and then run. Some of them would hit the ladies in the back and run all down the back of their dresses, hit them on the head and ruin their bonnets and the mens white shirts would have egg all over them. Some would hit the horses and cause them to run.
 Being boys they thought this was something great to do. This went on for a long time and my dad finally got to where he was ashamed to do these people this way as he knew most of them. He knew they worked hard and were good people.
Now how would you feel if you had rotten eggs thrown all over your clothes and in your car or wagon. That smell alone would be enough for me. But to drive a long way and it hot. Get almost to church and then have to go and turn around and go back home and not get to go to church and then have to try to get the eggs out of the clothes and not leave a stain in them was just to much. They could not let it dry and no dought had to go back home and either soak the clothes or get out the wash board and wash them on Sunday. Sunday being their day of rest.
This went on for a long time and my dad finally got to where he was ashamed to do these people this way as he knew most of them. He knew they worked hard and were good people. They lived a long way from church and it took a long time to just get there.
So one day my dad decided to drop in to the church and see what it was all about and just what went on there.
Most people back then did not believe in going to chuch and it was a small church with just a few members. He began to take a interest in what was going on and kept going back. One day something began to happen to him and when it came time for the alter service he went up and got saved. Who do you think was the preacher at that church. The one who he had throwed the eggs at time and time again. Did the preacher forgive him, oh yes he sure did.
Some of the boys that he ran with later on also got saved and became christens. He later became a minister and was one for around 65 years.
I told my dad I cannot believe you ever was mean like that. He was a person that would help anyone in need, never had a harsh word to say to anyone and was one of the most kindest and gentlest people you would ever want to met.
I would have hated to have to try to wash one of those dresses back then. Them being long and most of them were made out of cotton material and you then had to take a iron and heat it on the stove to iron them and the shirts and pants. I saw some of the pictures of my parents back in the old times and their clothes was always ironed so pretty.
 My mom would iron everything . Back in those time they had dollies they would lay around and they would starch even them and do them up. I remember many a time my mom doing this. Starch back then was made out of flour and water. Now can you see yourself trying to iron with flour water and not leaving white streaks all over everything. I sometimes have a time  with spray starch not leaving flakes on clothes let alone using  flour water, I remember how mom woud tell how  they would use to much and the pants would be so stiff they would stand up on their own. Now how could they get in them.That would be like wearing baked pants. lol. I am not jokeing either.

THELMA'S LEMON CAKE

My cousin makes this cake and it is so good. I love to eat the leftover frosting. This makes a big bowl of frosting and most time you will have some left over. Make sure you keep this ref. and it takes a large round cake container with cover for this recipe. I found one at the Family Dollar that is deeper than the regular ones.It will let you make a 4 layer cake and still not touch the top. I think  it was around $8.00.

THELMA'S LEMON CAKE

1 Box of Lemon Cake Mix  , I use the one with the pudding in it
2 Large boxes of Instant Lemon Pudding and Pie Filling, Jello Brand only
1 Medium Cool Whip

Make the cake up using directions for the round pans. Divide up so you will have 3 pans. Spray pan and bake for 30 minutes or what ever it calls for. These will be thiner so watch or they will burn fast on the bottom. Turn out on a cake rack or a piece of parchment paper or sprayed wax paper and let cool.

Frosting:
Mix the pudding up using the directions for the pie filling. Add about 1/2  of the 16oz.Cool Whip.( I think this is the right size) to the pudding mixture.
The mixture will turn a light yellow. This is the color I like to make it. Just add some Cool Whip and keep tasting until you get the right taste.Spread between each layer and on top and sides. Make sure it stays ref.

MY MOST USED PAULA RECIPE

One of the most used recipes that I use of Paula's is the Sour Cream Muffins.These are so simple and so easy to make. If you ever go to a shower or a potluck you will notice how they always run out of bread. Now my hubby just can't eat a meal without a roll or some type of bread even when we go out to eat unless it is fast food. I make these and most of the time take them in a throw away roasting pan and everyone of them is gone. You can't stop eating them. One leads into 6 or more. lol. I guess it is because I make mine in the small bite size muffin pans and to me it makes them more crisp.That is why I like them so good. I also always add cheddar cheese to mine. Try some and see what you think. You can't stop with just one.


PAULA'S SOUR CREAM MUFFINS

2 Cups self-rising flour
2 Sticks of butter or marg. Blue Bonnet, melted
1/2 Pint of Sour Cream
1/2 Bag of finely shredded Cheddar Cheese

Preheat the oven to 350 degreese
Combine the melted butter , I let mine cool a little, with the sour cream. Then I add the flour a little at a time. Last I stir in the Chedder Cheese. You do not have to use this. I always add more sour cream to mine. I use a half bag of the cheese. I love the cheese in them. They are something that you just have to make a batch and taste. You can use the regular sized muffin pan but I love to use the small one like for the bite sized muffins. Bake for around 20 minutes for the large ones. A little less for the small ones. Do not let the cheese burn on top. With the cheese added sometimes I have to let mine bake a little longer as to me they don't taste done in the middle but just don't over bake just work with them. The bite size ones will get brown on the bottom quick.

HAPPY BIRTHDAY TO MY TO FAVORITE PEOPLE PAULA DEEN AND MY HUBBY

How lucky can you be to have two of your favorite people having their birthdays on the same day. Paula Deen and my hubby's which was on Jan. 19. Paula is all of my family's favorite person and cook. I was so lucky to get to meet her in person at the Woman Today Expo in Knoxville, Tn. about three years ago. Let me tell you she is just like she is on tv. So friendly and kind to everyone she meets. I just wish I could look that young when I get her age. My granddaughter was helping me make some dumplings back before Christmas and she was just going about how she was going to be like Paula and cook like her when she grows up. I have never saw anyone that loves to cook like she does to be that young. When she was around 3 and was just beginning to pick up things we had a time going to shop. She would get the plastic bags and put onion, bananas, peppers and all kinds of stuff in the bag and if we tried to take them away from her she would throw a fit so we had to buy them. Then she would come home and we would have to cut it up for her and she would put it together and we would have to eat it. Now me I don't like a slice of onion and a banana or a cucumber and grapes. Buy we had to say it was good because she said she was little Paula .Now she can cook better.
Even my hubby likes Paula. He sure can't cook but he enjoys the recipes I make of hers. I am glad he is still with me as he was in a wreck last year that really hurt him. We all go from year to year and do we really think about dieing. I think we all take life for granted. But in just a few minutes you could be leaving from here. I had never really stopped and thought about him leaving me. I know we all think we will live to a older age but when you get sick or in a wreck it will sure open up your eyes and see how much you love each other and miss each other. Now every time he goes to work I am afraid to here the phone ring early in the morning , afraid it will be another call saying he has wrecked. Anyway just wanted to say Happy Birthday to my to most favorite people.

LOSE WEIGHT ON CHOCOLATE

While talking to my son he was telling me about a new thing out that lets you lose weight. So of course I had to know all about it. Here it is: chocolate. Now how can you lose weight on chocolate. I am a choc. or die person. If I don't get my choc. I feel like I could pull my hair out and I am dead serious. So to lose weight and eat choc. to me that would be heaven. He said it is a new program that is going on down in Nashville. This is supposed to be a type of healthy chocolate and granted I have been reading a lot on the dark choc. and how it is supposed to be healthy for you. I will try to find out all about it and post it on here. But with the way we cook it would have to work wonders. I am trying to get started back on WW. No matter how much I try I just can't seem to be like the ones on the biggest loser and lose weight. I have thyroid problems and that is my trouble. I can go all day and not eat and just eat a little in the evening and do this for a week and still not lose weight.
When I was younger in high school my dad was a printer. A man sent him the grapefruit diet to print up and this has been at least 30 years ago. lol. I went on it and went from a size 14 down to a size 7 and I can say that it does work. But you had better not have a bad stomach because it can sure upset it. And now a lot of meds. today does not allow you to drink grapefruit juice and take them. To me the best diet to follow is WW. My aunt was telling me how her daughter wanted to get preg. and her doc. told her she needed to lose some weight first. She said that the best way was to walk for at least 45 minutes a day and you would lose weight. It would stay off better by walking then just trying to starve it off. I know different ones who has starved it off including me and gain their weight back plus more. Well I am no doctor and not trying to get anyone to try anything but me for one sure needs to lose. I will try to find out more about the new choc. thing that is going on. See you all......

MICROWAVE POTATOES AND ONIONS

1 Medium Onion
5 Medium Potatoes
1/2 Stick Blue Bonnet Marg.
Lawry's Seasoned Salt
Pepper

Wash the potatoes and dry them. Then cut them into small pieces with skins left on. Take a microwaveable dish and spray it then lay some slices of onions on the bottom, then the potatoes and more onions, Add the butter sliced in pieces.Lawry's salt and pepper. Put a paper towel over this or a lid and cook for around 6 minutes on high , stir and then cook on high for around 5 more minutes or until they are done. Serve with some sour cream.

CROCKPOT MEATBALLS

My son is always making these and they are so good to take to a potluck or a shower. Easy to.


1 Bottle Heinz Ketchup
1 Bottle Chili Sauce
1 Jar Grape Jelly
1/2 Cup Brown Sugar
1 large bag pre-cooked meatballs


In a kettle mix the ketchup, chili sauce and grape jelly
Add the meat balls he buys the bag at Sam's Club or Walmart Bag
Pour the sauce mixture over the meatballs in a crockpot and cook on low for 3 hours or a little longer. Just test them to see if they are seasoned good. You can also make your own meatballs and use the sauce over them and put in a crockpot.If you do this you need to cook them in the crockpot longer.

BEEF AND MUSHROOM CASSEROLE

1 1/2 lbs Beef cut into small pieces
1 Can Cream Of Mushroom Soup
1 Package of dry Onion Soup MIx
1 Small Can of Sliced Mushrooms, drained
3/4 Cup Milk

Sear the meat in a little oil. Take off of the stove and mix in the other ings. . Mix well. Let simmer 3 minutes and then pour into a sprayed dish and cover with a lid or foil and bake for around 2 hours on 350 or until beef is done.You can also cook the beef  till it is almost done and then put in the other ings. and bake.Remove from the oven and serve over cooked egg noddles or cooked white rice. A loaf of sliced  bread such as french is good for dipping in the soup part.

CREAMY JAM SPREAD

If you need a spread for crackers in a hurry mix up some softened cream cheese, some marshmallow cream together in a bowl. Then add some strawberry jam or raseberry jam or orange jam. Mix again.
Spread on a Ritz cracker. This is so good. Just don't be dieting.Have you ever ate a Ritz cracker with a piece of choc. bar on top of it or ate it with a choc. bar. Try it. Some Lays plain chips and  a choc. bar is heaven. Or a choc. bar and a plain cracker. I know it sounds terrible but just try it sometimes.

SWEET RICE

Most everyone loves rice. I sure do. Here in the mountains we serve it for breakfast as a side dish. When you go to the city and began talking about this they look at you sometimes like you have lost it but trust me it is so good with sausage and biscuits. Of course we do like very one else these days and use instant rice a lot. But you can still cook the old time way with just regular white rice. If using white rice soak over night as this gets a lot of the starch out of it. Then drain.

SWEET RICE

1 Cup of instant rice
1/3 Cup of Milk
1/2 Cup Sugar or more to your liking
1/4 Stick of Butter

Fix rice according to directions on box. Take off stove and let it fluff up. Put the milk in the rice and the sugar and stir. Now add the butter cut in slices. Now put the kettle of rice back on the stove on medium but watch as it does not have any water in it and will burn easy. Let cook for about 3 or 4 minutes to melt the butter. Stir again . Take off of stove and serve with scrambled eggs, sausage and biscuits. It is also good served with gravy and bacon and fried eggs. If using regular rice. Cook and drain some of the water off of it and add the milk, sugar and butter. If it is to soupy just drain some of the soup off.

GRILLED CHEESE SUPREME

4 Ounces swiss cheese, shredded

4 Ounces cheddar cheese, shredded

1/3 Cup mayonnaise (Hellman's is best)

1T tablespoon prepared mustard

1T tablespoon chopped green onion

8 Sices bread

1/4 Cup softened butter



Procedure



1. Combine cheese, mayo, mustard and chopped onion.

2. Spread mixture on one side of 4 of the bread slices to within 1/4-inof the edges.

3.Top with remaining bread slices.

4. Spread softened butter on the outer sides of the sandwiches.

5. Cook over med heat in a hot skillet or griddle, until golden brown

GRILLED BACON AND CHEESE SANDWICHES

8 Slices of Sour dough bread
4 Slices of Mozz. Cheese
2 Large tomatoes, sliced thin
8 Slices of bacon ,fried
4 Tablespoons of sour cream
4 Tablespoons of chopped onion
1/4 Teasp. Oregano
4 Slices of Chedder Cheese
4 Tablespoons softened butter

For each sandwich:
Lay a piece of sliced moz. cheese on a slice of bread. Two slices of tomato on top of the cheese. Then add two bacon strips. Then 1 Tablespoon of sour cream and 1 teaspoon of chopped onion. Then a slice of chedder cheese. Then add the other piece of bread. Spread butter on each slice of bread and grill.

GYRO-STYLE PORK SANDWICH

1 LB. Boneless pork loin
4 Tablespoons olive oil
1 Tablespoon prepared mustard
1/2 Cup lemon juice
2 Cloves of garlic, minced
1 Teaspoon dried oregano
1 Cup plain yougurt
1 Cucumber, peeled and chopped
1/2 Teaspoon garlic, crushed
1/2 Teaspoon dill
1 Small red onion, peeled and thinly sliced
2 Pita loaves, halved

Cut pork crosswise into thin slices. Slice thin into strips 5 x 12 inch. Combine olive oil, mustard, lemon juice, garlic and oregano. Pour over pork slices. Cover and ref. for 1-8 hours.
Meanwhile in a small bowl. Stir together the yougurt, cucumber, garlic and dill. Cover and ref.
Preheat the oven to 450. Drain marinade from pork slices and place pork in single layer in a shallow sprayed pan. Roast until crisp about 10-12 minutes.Open each pita half to form a pocket. Put the pork into each half. Top each samdwich with some of the chilled yougurt mixture and the sliced onions.

HAM ROLL UPS

2 8oz. Cream Cheese, Sofened
1 8oz. Pack of Cheddar cheese
1 Pack of thin sliced ham, the 59Cent type
Or two slices of deli ham choped fine
2 Green onions chooped real fine
1/3 Cup or less of chopped green pepper
1 Pack of Flour Tortillas, Burito size

Mix cream cheese, onion and pepper  and ham all up together in a bowl. Then add the cheddar cheese. Spread this on the Tortillas. Cut each one into three pieces to serve. Keep ref. These are real good.

PINTO BEANS THE MOUNTAIN WAY

1 or 2 Lb. bag of pinto beans
1 Stick of Blue Bonnet Marg.or Parkay
1/2 Pack of bacon, fried and save the grease
Or can use 1 Medium piece of salt bacon and 1/3 cup oil
Water
Salt

Do Not Salt Beans Until Almost Done Ever.........

Now some people just don't know how to fix pinto beans or what we call them soup beans. Everyone I know loves my beans and no I don't mean to brag a bit they just do. I am like Paula I like to use butter or marg. This to me is what makes the beans. These are so good you can drink the soup. But cooking beans depends what type of kettle you cook them in and what kind of beans to buy. I like to buy the Walmanrt brand or the Kroger brand. Some beans makes red soup and that I do not like. I also don't like to fix them in a crockpot as this turns the soup red. Now for how to fix them. Of course, look them for the rocks that are sometimes in them. Do you ever wonder how they get in them, I do. Then wash them good at least three times. Then put them in a aluium. kettle or a heavy kettle and let them soak over night in water. To me this is what makes them so good.The next morning  fry up your bacon. I put some cooking oil in the pan and cut my bacon up in small pieces and let cook on medium not on high as the bacon will taste burned and this will ruin the flavor of the beans. Me, I sometimes just fry up the whole pack and make a sandwich with part of it. I let it get crunchy. Let cool .
Then pour the water off of the soaked bean and put fresh in the kettle and put them on and let boil for around 10 minutes or until you see a white foam form. Be carefual and don't get burnt and take them off of the stove and put them in a strainer, wash them again and put more water in them and put back on the stove on medium. I put a lid on mine and put a chopstick underneath the back side of the lid to let the steam out or they will overflow on your stove. Now add the bacon grease from the bacon and if you like you can put some of the bacon in as this gives more flavor, just don't be on a diet.lol. Next add the marg. cut in small pieces, I don't like to use anything but blue bonnet or parkay for this. If I don't use the bacon grease I add 1/3 cup of cooking oil along with the butter. I know, enough grease to about kill you.  I let mine cook for around 2 hours or until the beans are done. I add more water to them along the way make sure you keep pleanty of water in them that is what makes them so good if it is to much just let them cook a while longer and some of the water will cook out. If you like you can put some beno in them believe me you need this but I just put a medium potato that I peel and wash in them when they cook about half way done. This will work also. BUT don't let the potato cook to pieces. Take it out. Let it cook in them for at least 15 minutes. I only salt them when they are almost done. You have to taste them more than once to do this. I learned the hard way about salting beans. I cooked a pot for at least 4 hours one time and ask someone why it took so long. When did you salt them. At the beginning I said. No wonder they would not get done then. lol. I like to turn mine up on high for 5 minutes to get the soup thick but watch or they will BURN fast to. They will stick quick to the bottom of the kettle on high if you don't have a heavy kettle so if you don't use one just keep cooking them on medium.I also take some of them out and mash up and put them back in and this makes the soup thick. If 2 hours is not enough time to cook them just let them keep cooking longer on medium. Enjoy becuase they are good. Also  you can add a piece of salt bacon and cut it like a tic tac toe grid and put in them and not fry any bacon up.  Make sure you taste the beans before adding salt if you use this as they will be to salty. I love to eat the salt bacon with my beans. But still add the butter and some oil around 1/3 cup oil.  Fix some of my cornbread I will post to eat with these. We like to put chow-chow in them or add some mayo to our bowl and some people put some mustard in them in their bowl.We also got to have that big piece of onion to eat with them. Just remember to brush your teeth if you are going somewhere. lol. Most people fix fried potatoes as a side dish to go along with them and fried pork chops with pepper on them. If the butter don't blend in the beans when cooking at first don't worry just stir them and it will blend in. I stir mine about 5 times to make sure they don't stick to the bottom of the kettle. Sometimes even with water in them they will stick. Make sure you check on them.

CRYING OVER HER DOG

Everyone in out family are dog lovers. I have 4 granddog's and yes I call them my granddog's because I love them like my grandchildren. In another post I was talking about my granddaughter losing her black lab. She came and stayed all night with her little cousin who was in visiting. They had went to bed and was singing over one of the mikes you can buy now that lets you here yourself sing. Now my mother-in-law loves to sing, she was in the room with them in another bed so she ask them to let her sing them a song. She sung a very old song that my father-in-law used to sing to my kids when they were little. It was about two little girls with golden curls who had got some matches and played with them and then got burned up. Now these two was listening to every word taking it all in. It is such a sad song. Now my granddaughter just could't take this so she began bawling . She cried for at least a hour and my mother-in-law could not get her to stop. So they ask her what was she crying so about and she said my dog. Now this went on for at least another hour. When she starts crying she goes into fits. So here I get a phone call to come get her as they were leaving the next day and had to get some sleep.  I walked down and got her around one in the morning and brought her up to my house and  her face was swelled and eyes so red and I ask now what has caused all of this. I miss my dog she said and I can't stand to think that I can't get to see him no more and play with him. A big snow is on and he is in his grave and I know he is so cold. Now what do  you say to this.....
She finally stopped crying and got a piece of paper and began drawing. She drew a picture of a man and put Jesus under it and then she drew a picture of her dog and put Patch then she wrote Patch is with Jesus in heaven. This calmed her down by drawing . So if this ever happens just get a piece of paper and let them draw it will take their mind off of what they are crying about even if it is three in the morning. It don't matter how long your dog has been dead you still miss them. Mine has been dead for at least 10 years and every time I see a picute of her I cry and me a old grandma. She was a long haired golden retriver and my kids grew up with her. They are the best dogs to get for a child for a pet for a large dog. They watch out for them and really are very protective of them. They are also so gentle or the girls are. No wonder Oprah loves hers so much.The labs are the same way. But for a small dog for a pet for inside the house to me a yorkie or a poodle is the best. But that is just what we have been around alot. I love my other granddog's which are toy yorkies and a toy poodle. The one named Lucy is such a big baby and oh yes you can spoil them just like a child. Cody , the poodle is around 18 years old and has lost his teeth about two weeks ago and now is on soft food. He still loves to be petted and loves running outside altho he can't see that good now. He keeps up with the other ones tho.
 It is so sad to go by the roadside and see all the dogs people sit out to strave to death or get killed with a car. If I see them I always try to take some dog food back with me to feed them. I know I can't keep them but at least they won't starve for a while as long as I can see them.

ANGIE'S PECAN FROSTING

8 Oz. Cream Cheese, softened
1 Stick of butter or marg.
1 Box of Powdered Sugar
2 Teaspoons vanilla
1 cup chopped pecans

Cream the cheese with the marg. or butter and then add the powdered sugar, then the vanilla. Last the pecans. Mix well. Put on a choc. cake or a yellow cake. Also good on a Swedish Nut Cake.

AMY'S WEDDING FRUIT SALAD

2- 8OZ. Cream Cheese, softened
1 Large box of Instant French Vanilla pudding
1 Small Cool Whip
1 Can of Mandrian Oranges, drained
Green and Red Grapes cut in half
Strawberrys cut in half or sliced
Chopped Pineapples or tibits

Mix the pudding with room temp. cream cheese. Do not add the milk to the pudding, just use the dry mixture.Then add a small amout of cool whip to this. Mix well. Taste and see if it is enough to your liking.
Then add the fruits and mix and ref.

MOMMY'S BUSY DAY CAKE

Mommy's Busy Day Cake




1 Yellow Cake Mix

1 1/2 cups Graham Cracker Crumbs

3/4 cup Brown Sugar

3/4 cup Walnuts or Pecans, chopped

1 1/2 teaspoon Cinnamon

2/3 cup Butter or Margarine, melted

Powdered Sugar for glaze

Milk and vanilla for glaze

Directions:



Combine Graham Cracker Crumbs, Brown Sugar, Nuts, Cinnamon.

Mix in the butter or Marg. until well combined and set this aside.

Then fix the cake according to the directions on the box. Pour half of the batter into a 9 x 13 sprayed pan. Then sprinkle half of the Graham cracker

mixture all over the top of this. Spoon the remaining batter on top of graham cracker mixture then sprinkle with the remaining Graham cracker mixture

on top of batter. Bake at 350 for 40 to 45 minutes or until golden brown.Cool completely.



Glaze:

Combine

2 1/2 cups sifted powdered sugar

1/3 c. light corn syrup

3-4 tsp. warm water

Put in a bowl and beat all ings. on low until blended. Will be thin. This makes about a cup of glaze.



Or you can take:

1 cup powdered sugar, sifted

1 1/2 Tablespoons of milk

1/2 teaspoon vanilla extract

Mix this up in a bowl.

Spoon over cooled cake if you like.

PEPPER JELLY AND CREAM CHEESE

1 block of Cream Cheese
1 Jar of Pepper Jelly /Jam
Place Cream Cheese block on a  serving platter. Spoon several tablespoons of Jelly/Jam over the Cheese can use whatever amount you like. Serve with Tortilla Chips or Ritz or plain crackers.

FRENCH FRY SAUCE

If you are like me and just love to dip about everything then try this easy sauce to dip in.
All you need in some good flavored ketchup and some mayo and black pepper. Now in
A bowl pour you out some ketchup and then add the same amount of mayo. Stir this up.
Now then you pour about a Teaspoon of black pepper over all of this. Stir again and add
Another Teaspoon of pepper and stir again. If you don't like black pepper then leave out
This has been around for years.
This a good dip for frys, chicken and cheese sticks
Or about anything you want to dip. Now my kids can't understand when I go out to eat and
get frys why mom sits there and puts packs of pepper in her ketchup to eat with frys. Just try it.
Have you ever bought a Frosty at Wendy's and dipped your frys in it. My kid's grew up doing
this and still do and so does dear old mom. Never to old to dip...........

SIMPLE MADE DONUTS

1 ten count can Texas style doughnuts just don't use the flaky ones
1 cup sugar
1 Teaspoon cinnamon
1 Stick of  marg., melted\
Veg. oil for frying

Take a Diet Coke lid or Pepsi lid and cut holes in the canned biscuits in the center.
 Put holes aside but don't throw away.

Pour your oil in a skillet up to about 1/2 inch on sides. Heat on medium high but not on high for about 4 minutes. Drop one donut hole in the oil if it sizzles then put the donuts in and cook about 5 minutes or until
golden brown. Flip these over to the other side and let turn golden brown and then take them out and put
the holes in. When done, lay on paper towels for a few minutes to cool a little and then  dip them in the melted butter and then in the cinn.and sugar mixture. If you had rather have a glaze then take about a Tablespoon of milk in a small bowl and add some powdered sugar to it and stir good. Just work with it. These are so good you can't stop with just 3. lol

STEFENS CHICKEN ROLLS

4 Skinless chicken breasts, pounded out thin Cut into thin layers
1 Box of stovetop stuffing mix
2 Eggs, beaten
Montroal Chicken Seasoning
Dill Weed
1 Can of cream of mushroom or cream of chicken soup or a jar of chicken gravy
Milk for adding to soup

Wash chicken and pound out to thin pieces.Put the seasonsing on each side of them. Then in a bowl put the
stovetop dressing and beat the eggs up and put in this. It will make a paste do not add the water. Take and put the paste over all the chicken breasts.Spray a baking dish. Roll up and use two toothpicks to hold together. Put in baking dish seam side down Put the milk in the cream of mushroom soup and pour over top of this. Put foil on top and bake for 30 minutes or until chicken is done.If you do not have the dill just omit it.

FELICIA'S CORN

Candied Corn
1 Large can of two colored corn, drained
1/2 Stick of butter or marg. blue bonnett,  to one can of corn
5 Tablespoons cornmeal
5 Tablespoons sugar

Drain the canned corn.
In a skillet put the butter and let melt on low.
Add the corn to the butter and stir
Then add the cornmeal and sugar
Let get a little brown but not scorched  sort of look carmel colored
When almost done add a little more sugar
You can add more  butter  if you like

GROUND BEEF CASSEROLE

2 Cups Corkscrew Macaroni (Rotini)

1 Can cream of mushroom soup

3/4 C Shredded Cheddar Cheese

3/4 tsp Seasoned Salt

1 lb Ground chuck
1 can (14 oz) whole or diced tomatoes

3/4 C Geen pepper

1 Can french fried onions

Cook pasta as directed, rince and drain. Brown beef, drain fat. Combine all


ingredients except french fried onions. Pour into greased 2 quart casserole.


Cover and bake at 350 for thirty minutes. Uncover, top with french fried


onions, and bake five minutes longer

USES FOR LEFTOVER MEAT LOAF AND TOMATO GRAVY

Most time when I make meatloaf I have some of it leftover. Now there is nothing no better than a cold meatloaf sandwich on sandwich bread with mustard on it.Or on a hamburger bun. But another good thing to do with meatloaf is slice up some potatoes, some onions and green peppers and fry in a skillet and add meatloaf to it that has been crumbled up. Try it it is good. You can also make a tomato gravy and some good hot biscuits and put a piece of the meatloaf on the biscuit and then put some tomato gravy over this. Not tomato soup. Tomato gravey and biscuits is really good and here in the moutains it is a common thing to eat. Tomatos are good fixed with maccorni which has been cooked and drained and a large can of tomtoes has been added to this with which ever you like to add , some salt or sugar. Me I love them with salt and pepper instead of the sugar.You can also do this with just cooking the maccorni and draining and adding tomato juice to this. It is also a common side dish in these parts.

EASY PASTA SALAD

EASY PASTA SALAD


1 Package (16 oz.) spiral pasta, cooked and drained

2 Cups halved cherry tomatoes

4 oz. Monterey jack cheese, cubed

1 Cup  red bell pepper, chopped

1/2 Cup  green bell pepper, chopped

1 Can sliced black olives, drained



Dressing:

2/3 Cup  vegetable oil

1/3 Cup  red wine vinegar

3 Teaspoon  dried basil

1 Garlic clove, minced or 1 teaspoon minced garlic

1 1/2 Teaspoons salt

1Teaspoon sugar

1 Teaspoon  onion powder



Cook pasta according to package directions; drain and rinse with cold water. Place in a salad bowl, add tomatoes, cheese, peppers and olives. In a blender  or in a glass jar with lid on,  combine dressing ingredients and mix until blended. Pour over pasta mixture and toss to coat. Refrigerate until serving. Don't put the dressing on
until almost ready to serve as it makes it two watery.

BERRY AND ICE CREAM JELLO

1 Package  (3 oz.) raspberry gelatin

1 Package (3 oz.) strawberry gelatin

1Cup boiling water

1 Cup vanilla ice cream, softened

3/4 Cup strawberries, chopped

1/4 Cup. pecans, chopped

Make raspberry gelatin according to the directions on package. Ref. until set. Then dissolve the strawberry
gelatin in boilin water.  Let cool until this is syrupy. Then add the ice cream and beat until blended. Ref. until
almost set. Fold in the strawberries and pecans. Ref. until fully set. Return strawberry mixture to the mixing bowl and
wisk for 3-4 minutes on high until light and fluffy. By hand, mix raspberry gelatin into the strawberry mixture
until it is in small chunks, Ref. until this sets. If using frozen strawberrys make sure to get the juice out of them or it wil cause it to be to runny.

SESAME CHICKEN

SESAME CHICKEN

1 Cup Flour

2/3 Cup .Toasted sesame seeds, divided

1 Tsp .Black pepper

1Tsp. Chinese five-spice powder

1 1/2 Tsp. Cayenee pepper

1 Package chicken breast strips, cut into chunks

8Tbsp.  teriyaki sauce

6 Tbsp. honey

Oil for frying






In a large ziplock bag, combine the flour, 1/3 cup sesame seeds, the black pepper and the red pepper
and the chinese Spice. Put the chicken in the bag and shake it to coat it good.
Heat oil in large skillet or wok over medium-high heat. Place chicken into skillet and brown on both sides, about 5 minutes per side. Remove the chicken from the skillet and pour off the oil. Turn the heat down to low and put the chicken back in the skillet. Mix the teriyaki sauce, the honey and the 1/3..cup sesame seeds.
Put in the skillet and stir until the sauce thickens.Can use stir-fryed  vegs. in with this or cut up onions and green peppers. Serve over rice.

1 Cup of uncooked orzo
1 -14.5 oz can of chicken broth
1 Tblespoon butter
1 Tablespoon dried parsley
1/2 cup Parmesan cheese


Melt butter in a pan over medium heat. Then add the orzo and stir for 2-4 minutes
Until it is lightly toasted.Then add the broth and let boil for 2 minutes. Cover and let
Cook on low for around 15 minutes.The broth will absorb into the orzo and  it
Will get soft. Then add the parsley and cheese and stir it. Good with any type of
Baked chicken.

BROCCOLI CHICKEN ALFREDO

8 oz. pasta, cooked and drained
2 Tablespoons butter or marg.
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese
2 cups fresh or frozen broccoli florets
1 small can of  cut mushrooms, drained
,1 1/2 cups cooked chicken shredded or diced
1 jar alfredo sauce
2 Tablespoons minced garlic

Spray the bottom of a medium  baking dish or 2 small ones.
Put a layer of the alfredo on the bottom of this.
Mix all of the other ingrs. until combined and
Put over the alfredo sauce. On top of this put
The cheeses and then slice the butter and put
On top of the cheeses and let bake for 20 minutes
On 350
Until bubbly.

1 cup seasoned bread crumbs

1/2 cup freshly grated Parmesan

1 1/2 teaspoons dried thyme

1 1/2 teaspoons dried basil

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon garlic powder

Pinch ground red pepper

8 boneless chicken breast halves, cut into 1/2-inch strips

1/2 cup (1 stick) melted butter

In a plate



In a platter, combine the bread crumbs, Parmesan, thyme, basil, oregano, salt, garlic powder, and red pepper. Dip the chicken strips in the melted butter, then dredge them in the bread crumb mixture. Place the chicken strips in a single layer on a sprayed baking sheet. Bake for 20 minutes, or until chicken is cooked through on 350. Serve the chicken sticks hot with marinara sauce, or you can serve these cold with bottled buttermilk ranch dressing or honey mustard sauce.

3 or 4 skinless chicken breasts
1 cup flour
2 eggs, beaten
1/4 cup canola oil
Salt and pepper to taste




Directions

Cut boneless chicken breasts into chunks. Season with salt and pepper.Then dip the chicken in the flour and then in the egg. Fry in the oil until light brown but not cooked all the way through as it will get tough. Put in a
sprayed baking dish in a single layer. Mix the sauce ing. together and pour over the chicken and bake for 1 hour or until done. Turn over every 14 minutes. If you won't more sauce then you can make some on the stove. Put ings. in a kettle and put on medium heat and stir, let cook until the sauce is thick. It will reduce down so don't let it over cook. Cook around 5 minutes.

Sauce:
3/4 cup sugar
5 Tablespoons of ketchup
1/2 cup white vinger
1 Tablespoon soy sauce
1 Teaspoon garlic or garlic salt

GRILLED PIZZA SANDWICHES

Grilled Pizza Sandwiches
Butter
Bread
Mozzarella cheese, sliced
1 Jar of pizza sauce
Sliced pepperoni
Fix bread as if you were fixing a regular grilled cheese by buttering both pieces of bread
Place buttered side down on a skillet over medium heat. Then spoon a layer of pizza
Sauce on the bread, then add the cheese and then the pepperoni and the other slice
Of bread. Brown on both sides.

CHOCOLATE CHIP DIP

Chocolate Chip Cookie Dough Dip





1/2 cup (1 stick) butter

1/3 cup brown sugar

1 tsp. vanilla extract

1 (8-oz) pkg cream cheese

1/2 cup confectioner’s sugar

3/4 cup semisweet mini chocolate chips



1. In a small saucepan, melt the butter with the brown sugar over medium heat. Stir continuously, until the brown sugar dissolves. (You can also do this in the microwave but watch it closely. The butter/sugar mixture will boil over fast. Stir every 30 seconds or so.)



2. Remove from heat, whisk in vanilla extract and set aside to cool.



3. Beat the cream cheese and confectioner’s sugar for 1 minute.



4. Slowly beat in the cooled butter mixture and beat again for another minute.



5. Stir in the chocolate chips.



6. Pour into a serving bowl and refrigerate.



7. Garnish with additional chips, if you choose.



Serve with Vanilla wafers  or graham crackers.Remove from fridge around 15-30 minutes before
serving so it will soften up enough to spread.

EASY CHICKEN SPREAD

Easy Chicken Spread


8-oz. cream cheese
Small onion, finely chopped
Smal can (4.25oz.) canned chicken
1 Tablespoon mayo
1 Teaspoon soy sauce

Blend all ingredients together with a hand mixer until creamy and combined.
Serve on Ritz, Wheat or Town House crackers.

RANCH PRETZELS

9 oz. bag of pretzels
1/4 Cup of vegetable oil
1 Pack of Hidden Valley Ranch Dip
1/2 Teaspoon garlic powder


 Preheat oven to 250 degrees. Place the pretzels in a gallon sized ziploc bag. Add the oil, seal
the bag and toss to coat. Add the dry ings. to the bag. Seal and toss again until all of the pretzels
are coated. Spread on a baking sheet and bake for 15-20 minutes until all of the oil has been
absorbed into the pretzels. Cool and store in a air tight container.

CREAM CHEESE AND SAUSAGE CRESCENT BITES

CREAM CHEESE AND SAUSAGE CRESCENT BITES
1 lb. sausage, or 1 lb. Italian sausage, browned & drained
1 (8oz.) cream cheese, softened
2 pkg. Pillsbury Crescent Dinner Rolls

Brown and drain breakfast sausage . Combine sausage & cream cheese. Roll into logs about 2 inches long place on crescent triangle or spoon into crescent. Roll up Crescents and place on a lightly greased baking sheet. Bake 350 about 20 minutes or until golden brown.

MAPLE FUDGE

1 Stick of butter
1 Cup chopped nuts
2 Lb. light brown sugar
1 Large can Carnation cream
1 Tablespoon maple flavoring
24 Oz. almond bark
1 Large jar Marshmallow cream

Mix brown sugar, butter and cream together.
Bring to a boil. Boil to soft ball stage
Remove from heat
Stir until thick
Pour into a buttered 8 x 8 pan or a little
larger. Cool. Cut

2 - Cans Cut Green Beans 14oz ., drained
4-5 Slices of Bacon, cooked and crumbled
4 Tablespoons Sugar
3 Tablespoons White Vinger
Pepper to your taste

Fry up the bacon and drain off of the grease. Then crumble it and sit aside.
Put the green beans in a bowl and sprinkle the sugar over top of them.
Then add the vinger and crumbled bacon and stir good. Spray a baking
Dish and put this in it. Sprinkle some pepper over top of this and then
Cover and bake at 350 for around 15-20 minutes until the beans are
Well heated.

MINI BURGERS

These burgers are so good. We have several small stores in our area that make thsese.

MINI BURGERS
1/2 cup dried onion flakes

2 pounds ground chuck- 80/20 ground beef or
you can also use ground turkey

1/2 t. seasoned salt

6 slices cheddar or american cheese
24 small party rolls can use sara lee (the square kind)
24 or more dill pickle slices




Spread the onions on the bottom of a 9x13 inch lightly sprayed baking dish. Gently press the ground beef on top of the onion flakes. Press evenly making one giant pattie. Sprinkle with seasoned salt. Bake in a 350 degree oven for 20 minutes.Take a paper towel, pat the excess grease from the top of the pattie. Top with cheddar cheese slices or white american or yellow american, return to oven for 2 more minutes. Remove from oven slice open the rolls,put the rolls, the bottom part turned upside down over the meat.Cover with foil,let set 5 minutes.Or you can put the buns on when you put the cheese on and put back in oven covered with the foil.Using a spatula lift pattie with onion layer amd each bun bottom. Take off top bun.Put mayo or mustard on the top bun.Top each slider with a pickle slice or ever how many pickles you like, then the bun top. Serve immediately.You can also make these with ground turkey. Makes 24 Sliders.

CREAM CHEESE SPAGHETTI

CREAM CHEESE SPAGHETTI

1 lb.ground chuck,crumbled, browned and drained
1Jar (24 -26 oz) Ragu Traditional Italian Spaghetti Sauce or your
Choice of Sauce
1/2 Pack (4oz.) of cream cheese, cut up in small cubes
1 Small box of spaghetti, cooked and drained
3 Tablespoons grated Parmesan cheese

Cook beef until brown and  crumble
Then drain off grease
Stir in the Ragu or your favorite kind of sauce
Then put in the cream cheese
Turn down to low and stir until cheese is melted
Put the spaghetti in a bowl
Add the sauce and toss this good
Then sprinkle on the Parmesan cheese

MACARONI AND GROUND BEEF SKILLET DISH

1/2 lb elbow macaroni


1 lb ground beef

1 large onion, diced

1 can (28 oz)diced tomatoes

salt and pepper



Cook macaroni according to package directions. Meanwhile brown ground beef with onion in skillet and drain. Return to skillet and add can of tomatoes. Season with salt and pepper to taste and add cooked macaroni. Simmer for around 10 minutes.Don't over cook.

MEAT BALLS WITH SALSA

1 Lb. Ground chuck
1 Lb. Itatian sausage
1 Jar of tomato salsa
1 Green Pepper, chopped
1 Medium onion, chopped
1 Egg, beaten
Bread Crumbs
Salt and Pepper

Mix the Hamburger and sausage together in a bowl. Add the chopped onion and pepper and then add the egg and the bread crumbs about 1/2 cup more or less ever what you like. Add the salt and pepper. Form into meat balls. Place in a sprayed oven proof bowl. Pour salsa over top. Bake for 20 minutes or until done. Can put shredded Monzello cheese over top when you take them out of the oven.

POTATO CHUNKS AND SALSA

4 Potatoes washed and dryed and cut into chunks
1 Jar of Salsa, Tomato flavored
1 Bag of Mozella Cheese, shredded
Garlic powder

Take the potatos and cut into small chunks but not to small.
Salt and put some garlic powder on them or can use garlic salt and
Leave off the salt.
Deep fry until light brown
Take out and put in plate
Pour salsa over them and then add the cheese on top of this.Ever how much of the cheese you like.

BEEF AND BEANS

BEEF AND BEANS


1 lb ground chuck
1 medium onion, chopped

1 28 oz. can baked beans

1/4 cup barbeque sauce or ketchup

1 cup shredded cheddar cheese

In a large skillet with a lid, coof beef and onion over medium eat until meat is done. Drain off grease. Stir in beans and sauce and heat throught. Sprinkle with cheese. Cover and cook on low until the cheese is melted.

APPLE AND CREAM CHEESE COBBLER

Apple layer:


8 apples

1 C. sugar

1 T. cinnamon



Crunchy baked topping:

1/2 C. brown sugar

2 T. butter

2 T. flour

1 t. cinnamon



Cobbler layer:

1/2 C. butter

1 C. brown sugar

2 eggs

2 C. self-rising flour

1 C. sour cream

2 T. rum or rum flavoring



Cream cheese topping:

8 oz. cream cheese

1 C. cream

1 t. vanilla

1/2 to 1 C. sugar



Heat oven to 400° F. Peel and slice apples. Spread apples in 9-by-11-inch glass casserole. Sprinkle on sugar and cinnamon and bake while you prepare the rest of the cobbler.



Mix ingredients for crunchy baked topping.



For cobbler layer, soften butter and mix with sugar with electric mixer. Add eggs and mix. Add remaining ingredients in cobbler batter. Dollop over hot apples. Sprinkle with crunchy topping mixture. Bake about 30 to 40 minutes. Cobbler is done when cake part is brown and firm.

Combine cream cheese topping ingredients and whip until light and fluffy. Top each serving of cobbler with this mixture.

ALMOND JOY SHEET CAKE

 CAKE
1 Devils food cake mix with pudding

1 C. canned milk

1 C. sugar

24 large marshmallows

1 bag (14 oz.) coconut



Frosting:



1 pkg. almonds, sliced, slivered or whole

1 1/4 C. sugar

1/2 C. canned milk

1 stick margarine

1 bag (12 oz.) milk chocolate chips





Mix cake mix as box directs. Bake in a greased 12 x 13 inch pan at 350
degrees for 20 minutes.



While cake is baking, mix the rest of the ingredients, except coconut

in pan over low heat. Stir until melted.



Remove from heat and stir in the coconut. Mix well and spread on warm

cake.



For frosting: Sprinkle almonds over the coconut layer.



Heat sugar, milk, and margarine until melted. When completely melted,

remove from heat and stir in the chocolate chips. Mix until smooth

and spread on cake. Cool before serving. The longer the cake sits in ref. the better it gets.

1 package DUNCAN HINES Moist Deluxe Butter Recipe  Cake Mix

1 package (4-serving size) banana cream-flavor instant pudding and pie filling mix

1-1/2 cups milk

1 container (8 ounces) frozen non-dairy whipped topping, thawed

3 medium bananas, sliced

3/4 cup English toffee bits


Preheat the oven to 350.Spray a 10 inch tube or bunt pan.
Prepare, bake and cool cake as directed on package.
Then combine pudding mix and milk in bowl. Mix until
Well blended. Chill for 6 minutes.
Fold in the whipped topping
Chill this while the cake is cooling
Cut the cooled cake into 12 slices
Place 6 slices of cake in a glass bowl
Put the bananas, then the pudding
Then the toffee pieces
On top of cake. Repeat the layer again.
Chill until ready to serve.

BAKED CABBAGE HEAD

1 Large Cabbage Head
1/2 Stick of Butter, Blue Bonnet
Salt

Take one large head of cabbage and hollow some of it out in the middle. Wash good. Let drain. Then put about a half stick of sliced butter all around in it.Salt it. Put in a ovenproof bowl and  cover it with alum. foil let bake until done but not to dryed out.You can also put some green peppers and onions down in the hollowd out part. If doing this put some of the sliced butter on top of the peppers and onions.

2 LBS. OF BOLOGNA

1/2 PINT OF MIRCLE WHIP OR HELIMANS MAYO

1/2 JAR OF SWEET RELISH

SWEET PICKLES, CHOPPED FINE

CHEDDAR CHEESE

ONIONS, IF YOU LIKE CHOPPED FINE

BOILED EGGS IF YOU LIKE CHOPPED FINE



Procedure



Grind the bilogna up in a food processer or have it done at the store. Add the pickle relish and Chopped pickles for crunch. Add the Mircle Whip. Some people use the whole pint jar of Miracel Whip in this.This may take more just work with it. Then add the onions if you like. I would put them in right before serving as sometimes these make it taste bitter. I leave this out. You can also add finely shredded Cheddar Cheese and boiled chopped eggs also to this. But I don't like the eggs in it. Make sure it is kept ref. until almost ready to serve. When making the sandwiches for the party put a thin layer of Mircle Whip on each piece of bread, this keeps the bread from being soggy. Then put the mixture on the bread. You can also spread wet paper towels over the sandwiches to keep them from drying out just don't get the towels to wet. It is more spreadable if left out a short time before putting on the sandwiches.2 lbs. of bologna will make a very big bowl of this stuff. It is so good and most people eat at least 4 sandwiches. So always make plenty.

BANANA CREAM CHEESE SQUARES

BANANA CREAM CHEESE SQUARES
40 NILLA Wafers, finely crushed

(1/2 stick) margarine, melted

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

1/2 cup powdered sugar

1 tub (8 oz.) COOL WHIP Sugar Free Whipped Topping, thawed, divided

3 bananas

2 pkg. (1.5 oz. each) JELL-O Vanilla Flavor Instant Pudding

3 cups cold milk

1/2 square BAKER’S Semi-Sweet Chocolate, grated



Combine the  crumbs and margarine; press onto bottom of 13×9-inch dish.

Refrigerate while preparing filling.



Mix cream cheese and sugar in medium bowl until blended.

Stir in 1-1/2 cups COOL WHIP; spread carefully onto crust. Set aside.

Cut bananas crosswise in half, then cut each piece lengthwise in half.

Arrange over cream cheese mixture.



Beat  pudding mixes and milk with whisk 2 min. Spoon over bananas.

Spread with remaining COOL WHIP; sprinkle with grated chocolate.

Refrigerate 3 hours before serving. Keep ref.

3 Chicken Breasts

1 can Sauerkraut

1/2 Pack ofSwiss Cheese or Mozzarella Cheese

1/2 Bottle ofThousand Islands Salad Dressing

Salt & Pepper



Line the bottom of your baking dish with well drained Sauerkraut

Place Chicken Breasts on top and sprinkle with salt & pepper

Add one slice of Swiss cheese or Mozzarella on top of each breast

Pour Thousand Island Dressing over the top. Cover with aluim. foil

Bake @350 for 1-2 hours or until chicken is cooked done.

HOW HIGH WILL THE ELECTRIC BILLS GO

It is 11 degrees here. Our electric has been running and just won't cut off. I thought it may have tore up so I called some of my friends and they are having the same problem. So don't go and change it over to emer. heat. I even went and read up on problems with central heat and found out it could be not going off enough because of our filter. So we changed it. It seemed to help it. But it was not that dirty just so cold outside. I did learn one thing new. Don't never run your air if it is under 50 degrees outside. It said that by doing this you could ruin your central air. I sure did not know this. My daughter done this around Christmas from where we had been cooking and it got so hot we flipped it over on air to cool off. I don't know if it was 50 outside or not. Hope it never ruined anything.
I will sure hate to see our electric bill for Jan. some of our friends bills was $355.00. Now that is enough to buy your groceries for a month. And a lot of the people don't have enough income to pay these bills. I guess we may all have to go back to coal. But it is around $100.00 a ton now. So we can't win for losing. I also found out that if you have a fireplace don't burn fresh wood in it as it will stop it up. Use last years seasoned wood. That I did not know. So it just goes to show you are never to old to learn something new. I pray that everyone can stay warm and just don't be out unless you have to. Let someone know if you go outside. You may fall and they may think you are where you were going and not think to check on you and you would freeze before you know it. Make sure the dogs water is fresh. They have to drink just like us. Add some warm water to their buckets or bowls because it is so cold coming out of the sink it will be cold on them trying to drink it also.

CRESCENT SAUSAGE ROLLS


1/2 of a 1-lb.sausage roll
1 8-oz.. block cream cheese
1 tube crescent rolls Big & Buttery ones

Preheat oven to 350 degrees.
Brown the sausage in a skillet over medium heat. Drain on paper towels and wipe out the skillet. Return the sausage to the skillet (off of the heat) and add the cream cheese. Stir together until the cream cheese is melted.
Open the tube of crescent rolls and unroll onto a work surface. Press together the seams of the triangles leaving the three "scored" rectangles. Cut each rectangle into two squares, making 6 squares to work with. Press the squares out slightly creating more surface area. Put approximately 1/4 cup sausage cheese mixture in the center of each square. Pull corners up over the center and twist creating little pockets. Twist and press the seams to make sure they are all sealed.
Place on a baking sheet or baking stone and bake in a 350 degree oven for 20-22 minutes. Serve warm.


JIFFY MIX CORN MUFFINS


1 cup corn kernels
1 package Jiffy Corn Mufin mix
11/2 cups shredded cheese
1/2 cup milk
1 egg

Preheat oven to 400 degrees.Spray a 12 cup muffin pan.

In mixing bowl, combine drained corn, muffin mix, cheese, milk and egg; spoon evenly into prepared muffin cups. Bake 14-16 minutes or until brown. Will make around 12.

Stefen's White Chocolate Cranberry Oatmeal Raisin Cookies
