Salmon Sandwiches

  • 1 Can Salmon
  • Light Mayo
  • Salt and Pepper
  • Spike or Seasoning Salt
  • Fat Free Shredded Cheese
  • Hot Sauce
  • Diet Wheat Bread

Take the salmon and mash them up in a bowl. Add a little mayo and add salt an pepper. Put on sliced wheat bread. Put in oven on 350  for 10 minutes.

TRINA'S RUBEN SANDWICHES

Ingredients
  • 1 Loaf Rye Bread(light colored)
  • 1 Pack Swiss Cheese(sliced)
  • 1 Can or 1/2 Bag Kruat(drained good)
  • 1 Lb. Pastrami Meat(sliced thin)
  • 1 Stick Blue Bonnet
  • 1 Bottle Thousand Island Dressing

Directions:
Put the swiss cheese on one piece of the bread. Then add the pastrami. Then drain the kraut, I like to warm it up a bit in a skillet and like half fry it before putting on the sandwich. Next add the kraut then the other piece of bread. Put some marg. in a skillet and let melt. Put the sandwich in the butter on medium so it will not scorch. Let get brown then flip over and do the other side. Can also be done on a paini machine. Dip in thousand island dressing or can dip in a thin sour cream or ranch dressing.

EASY SHREDDED CHICKEN SANDWICHES

1 Can (28)oz. Canned Chicken
1 Can (10)oz. Cream Of Chicken Soup or Cream or Celery or Mushroom Soup
1/2 Sleeve Of Crackers, crushed or Can Use 1/2 Cup Stuffing Mix

Place chicken with juices in pan on stovetop over medium heat. Shred chicken with a fork. Add soup and crackers. Heat thoroughly while stirring. Salt and pepper to taste. Serve with buns and a side of pickles. Makes around 6 sandwiches. Can be made also in the crockpot.

ITALIAN GRILLED CHEESE

3 Eggs
2 Tablespoons Milk
2 Teaspoons Garlic Powder
2 Teaspoons Italian Seasoning
2 Tablespoons Grated Parmesan Cheese
6 Slices American Cheese
12 Slices Sandwich Bread

Whisk eggs, milk, garlic powder, Italian seasoning, and Parmesan cheese together in a bowl.
Place each American cheese slice between two pieces of bread to assemble 6 sandwiches.
Dip both sides of each sandwich in egg mixture.
Heat a non-stick frying pan over medium heat.
Place dipped sandwiches in the hot frying pan; cook until golden brown and cheese is melted, about 3 minutes per side.

TOMATO SANDWICHES

  • 1 Baguette
  • 1/4 Cup Mayo
  • 1 Small Pack Cream Cheese, softened
  • 2 Tsp. Chopped Fresh Basil
  • !/4 Teaspoon Salt, divided
  • 1/4 Teaspoon Pepper, divided
  • 4 Plum Tomatoes, sliced

Cut baguette into 16 slices. Stir together mayo, cream cheese, basil, 1/8 teaspoon salt and 1/8 teaspoon pepper. Cover and chill for 8 hours. Spread cheese mixture onto baguette slices. Top with tomato and sprinkle the rest of the salt and pepper on each sandwich.

GRILLED TUNA MELT

1 (3oz.)Can White Tuna in Water, drained
1 Tablespoon Mayo or Miracle Whip
1 Teaspoon Chopped Green Onions
2 Slices Whole Grain Bread
1 Cheese Slice
2 Tablespoons Butter or Blue Bonnet marg.

Mix the tuna and onion and mayo together. Put on the bread. Then add the cheese slice. Add butter to pan.Cook in nonstick skillet 3 minutes on each side or until golden brown on each side.

PESTO AND TURKEY SANDWICHES

1 Loaf Cibatta Bread 
Deli-sliced Turkey
Tomatoes, sliced
Pepper Jack Cheese, sliced
Pesto
Mayo

Slice cibatta loaf in half and then into wedges. Mix mayo and pesto until you like the way it tastes. Spread on bread and then layer with turkey, tomato and pepper jack cheese. Broil in oven until cheese is melted. Watch and do not let cheese get to brown as it will harden.

CHICKEN SPREAD SANDWICHES

16 oz. Chicken Breasts, cooked and chopped   6 Soda Crackers, crushed
2 Tablespoons Sugar
1/8 Teaspoons Salt
1 Tablespoon Catsup
Miracle Whip, to your liking
Boil the eggs and chop. Wash chicken and then cook till done and then chop. Put the eggs and chicken in a medium bowl and then add enough miracle whip to make it the right consistency. Then add the rest of the ings. and mix together and put on sandwich bread. Makes a good sandwiches. Keep ref.

CARROT AND CREAM CHEESE SANDWICH

1/2 Block Cream Cheese, or Pineapple Flavored Cream Cheese in Tub
2 Slices Sour Dough or Thick Sliced Bread
Shredded Carrots
Dried Cranberries
Raisins
Toasted Sunflower Seeds

Put the cream cheese on both slices of bread. In a bowl mix the carrots, dried cranberries and raisins and sunflower seeds together. Spread on cream cheese and put the other piece of bread on top. May not sound very good but this is.

SLICED EGG SANDWICH

3 Boiled Eggs
Lettuce
Tomato
Roasted Red Pepper
Mayo
2 Slice Whole-Grain Bread
Salt and Pepper

Boil eggs, let cool. Peel. Take and lay a piece of bread on a plate. Slice the eggs and put on the bread. Add a little salt and pepper if you like. Then add the tomato and lettuce. Put some mayo on the other slice of bread and enjoy. Can toast the bread also. Serve with some yogurt or a cheese stick.

MINI MEATBALL SANDWICHES

They were demo these at Sam's Club also the other day and they are so good and very easy and fast to make.

1 Jar (32)oz. Classico Tomato and Basil Sauce
2 Lbs. Casa Di Bertacchi Meatballs or around 52 mini meatballs
3 French Baguettes
15 Mozzarelia Cheese slices Or can use shredded mozzarelia cheese

In a crockpot or a large pot on the stove on medium heat. combine the tomato and basil sauce with the meatballs. Bring to a simmer then reduce heat and cook for 18-20 minutes (this is in the crockpot)stirring occasionally until meatballs are heated through(will not take this long if fixing them on the stove). Cut baguettes into 4 inch segments and then again lenghthwise. In other words just split them but don't cut them all the way into. Place 3 meatballs in each sandwich. Add cheese and some of the sauce. Or you can use the football shaped dinner rolls found at most stores that are already made and split them and put 3 meatballs on the bottom part and then some cheese on top of the meatballs and then put the other piece of bread on and I like to sort of smash them down. They are so good.

PIZZA BURGERS

1 Lb. Ground Chuck
8 oz. Pizza Sauce
1 Cup Mozzarella Cheese
1 Teaspoon Italian Seasoning
Salt and Pepper to taste
Brown meat in skillet and drain fat. Add sauce and seasonings and simmer 3-4 minuets. Sprinkle with cheese, cover and cook until cheese melted. Serve on buns with extra cheese if you like.

3-CHEESE GRILLED CHEESE

1 (3oz.) Box Cream Cheese, softened
1 Cup Shredded Cheddar Cheese
1 Cup Shredded Mozzarella Cheese
3/4 Cup Mayo
1/2 Teaspoon Garlic Powder
1/8 Teaspoon Salt
10 Slices Italian Bread(1/2 inch thick)
2 Tablespoon Butter or more

In a mixing bowl, combine cream cheese and mayo until smooth. Stir in the cheeses, garlic powder and seasoned salt. Spread five slices of bread with the cheese mixture, about 1/4 cup on each. Top with another slice of bread. Butter the outsides of the sandwiches. Cook in a large skillet or panini press over medium heat until golden brown on both sides.

BRIE-CRANBERRY SAUCE GRILLED SANDWICH

This is a different kind of sandwich and real good. The sweet and sour combo is so good. Could eat this every day. You can use up your cranberry sauce left over from Thanksgiving or Christmas.

Camembert or Brie Cheese
Cranberry Sauce
Balsamic Vinegar
Bread
Butter

Take one piece of bread and butter it. Put a wedge of camembert or brie cheese onto the unbuttered side of the bread. (If wedge is thick then just slice it to fit all of the bread). Top with a spoonful of cranberry sauce. Drizzle some drops of balsamic vinegar over the sauce. Put the other piece of bread on sandwich and spread top with butter. Fry in pan until golden brown and cheese is melted. Cut in half and eat.

CROCKPOT VELVEETA HOT DOGS

1 (1 lb.) Pack Hot Dogs
2(15oz.) Cans Chili
8 Oz. Cubed Velveeta Cheese
1(4oz.) Can Chopped Green Chilies, drained, if you like for spice
Hot Dog Buns
Chopped Onions
Mustard

Combine the chili, Velveeta, and green chilies in a slow cooker. Gently mix in hot dogs. Cover and cook on low for 4-5 hours. Take hot dogs out and put on bun and add mustard and then add the chili mixture. Serve with onions on top or what ever you like.

EASY BBQ

1 Lb. Ground Chuck or Turkey

1 Small Onion, diced
1 Can Tomato Soup, not the family size
1 Tablespoon Ketchup
1 Teaspoon Mustard
1 Teaspoon Sugar

Brown the meat with the onion, drain. Mix in the rest of the ings and heat . Serve on mini buns or regular hamburger buns. Can top them with mayo, cheese and pickles.

FRYED MOZZARELLA DIPPED SANDWICHES

2 Eggs
Salt
Flour
Italian Bread Crumbs
Sliced Mozzarella Cheese
Bread of your choice(Texas Toast is good for this)
Oil for frying

Beat eggs and salt together in a shallow bowl. Set up two plates, one with flour and one with bread crumbs. Put the mozzarella chese on the one piece of bread and then put the top on. Dip in the flour, then the egg and then in the bread crumbs. Heat oil in a skillet over medium heat. Fry until they are golden on both sides, then remove to a paper towel-lined plate to drain. Can use marinara sauce to dip these in or can add sliced pepperoni to the sandwich if you like.

GRILLED FAJITA BURGERS

1 Lb. Ground Chuck, grilled
1 Pack Fajita Mix
1 Medium Onion, sliced
1 Medium Bell Pepper, sliced
1 Pack Pepper Jack Cheese

Take one tablespoon of the fajita mix and add to the pound of ground chuck and mix good. Make into four patties. Put them on grill to cook. In a skillet take and melt a 1/2 stick butter or marg. on low so it will not burn. Add the sliced onions. Let them carmalize until light brown and then add the sliced peppers. Add the rest of the pack of fajita mix to the onion mixture. Let cook 5 to 10 minutes until they are soft. Grill your burgers until they are  done and then add the pepper jack cheese. Take off grill and put on bun. Add the onion mixture to the top of patty. But some mayo on the top bun and serve.

BIG AND JUICY FRESH TOMATO SANDWICH

1 Loaf Ciabatta Bread cut into individual slices 

1-2 Fresh Ripe Tomatoes, red
1 Jar Roasted Red Peppers
Fresh Mozarella Cheese
Sliced Turkey(optional)
1 Cup Pesto

Vinaigrette:

1 Tablespoon Fresh Parsley or 1 Teaspoon Dried
1 Tablespoon Fresh Marjoram or 1 Teaspoon Dried
1/4 Cup Fresh Basil, chopped or 4 Teaspoons Dried
1 Clove Garlic
1/3 Cup Olive Oil
11/2 to2 Tablespoons Balsamic Vinegar or to your taste

Combine spices and garlic in a food processor. Add olive oil and balsamic vinegar and blend until mixed. Spread some of the vinaigrette onto one side of the bread. Spread pesto on the other half. Layer with tomato, cheese and the turkey. Very juicy so use paper towels to catch the juice.
