SALMON PATTIES WITH DIPPING SAUCE

1 (14 3/4 ounce) Canned Salmon
1/4 Cup Onion, minced
1/4 Cup Cornmeal
1/4 Cup Flour
1 Egg
3 Tablespoons Mayonnaise
1/2 Teaspoon Garlic Powder
Salt and Pepper
Oil for frying

Drain the salmon and flake with a fork. Add all the ings. except the oil. Mix good and form into patties. In a medium skillet heat the oil and add the patties. Fry on medium until golden brown. Turn over one time. Use with dipping sauce.

Dippng Sauce:
1 or 1/2 cup Mayo
1 Teaspoon Prepared Mustard

Mix these together and use as a dip with the salmon. Can add more mayo or mustard to your liking.

FISH FRY MIX

1 1/3 Cups Yellow Cornmeal
1/4 Cup All-purpose Flour
1 Tablesppon Lemon Pepper
2 Teaspoon Salt
1 Teaspoon Onion Powder
1/2 Teaspoon Paprika

In a large bowl, combine all ings. Store in an airtight container.
To prepare fried fish:
Dip fish in buttermilk and roll in coating mix, To cook, pour oil intoa Duch oven to a deph of 2 to 3 inches. Heat to 375. Fry coated fish, one piece at a time, about 4 to 6 minutes or until golden brown.

SALMON AND DILL PATTIES

1 Large Can of Salmon
1 Egg
3/4 Cups Milk
1 Tablespoon Dill Weed
1 Pack of Zesta or regular Crackers
Cooking Oil for Frying

Mix the Salmon, egg and dill weed and milk together. Last add the crackers and let sit in ref, for 2 hours for flavors to blend. Fry in veg. oil until they are brown on both sides.

SALMON PATTIES

1 Can Salmon with liquid
1 Can Cream of Celery Soup
11/2 Cups Crushed Italian Seasoned Bread Crumbs
1/3 Cup finely Chopped Onion
1 Large Egg, slightly beaten
Flour
Oil

De-bone the salmon, and then in a large bowl, mix together the salmon with the liquid, soup, bread crumbs, onion and egg. Form into patties. Lightly coat each patty in flour on both sides. Fry patties in oil on each side until golden brown.

BAKED ORANGE ROUGHY FISH

6 Fliiets Orange Roughy
1/2 Cup Breadcrumbs
1/3 Cup Grated Parmesan Cheese
2 Tablespoons Molly McButter Sprinkles
1 Tablespoon Italian Seasoning
1 Tablespoon Olive Oil

Preheat oven to 400.
Combine bread crumbs, cheese, butter sprinkles and Italian seasoning in a bowl.
Brush fillets with olive oil and then coat evenly with seasoned breadcrumb mixture. Spray a cookie sheet and lay these on it. Bake until fish flakes easily with a fork and is done.

DEEP FRIED CATFISH

2 lbs. Catfish cut in 1-oz. strips
2 Cups Flour
3 Eggs, Slightly Beaten
4 Tablespoons Water
2 Cups Panko Bread Crumbs
Kosher Salt and Fresh Ground Black Pepper
Oil For Frying

Wash the fish and cut into the strips. Then beat the eggs and add the water to the eggs. Put the flour and bread crumbs in seprate dishes. Salt and pepper the fish then dip into the egg mixture then in the flour. Dip in egg mixture again and then in the bread crumbs. Deep fry in oil. Watch or they will scorch easy. Can use Lawery's seasoned salt instead of the kosher salt. But don't use as much or they will be to salty.

STEFENS TUNA SALAD

This is my sons Tuna Salad Recipe. Every time he come home he has to make some up for us. I just can't get it to taste like his even tho I use the same ings.

2 Medium Cans of Tuna
1/2 Small Onion chopped, if you like
3 Eggs, Boiled, chopped
4 Tablespoons Miracle Whip
1 Small Can of Chopped Black Olives, drained
1 Small Tomato, Chopped
Sweet Pickles, chopped or Pickle Relish to  your likeing
Crazy Mixed Up Salt

Drain the tuna, In a bowl put the tuna, onion, tomatoes. Then add the Miracle Whip. Stir good. Next add the pickles or relish and stir again. Now  add the olives. Stir. Next mix in the eggs so they will not crumble all to pieces. Then add the salt. The crazy mixed up salt to me is what makes this so good. Just work with this and adjust the ings. You may have to add more Miracle Whip. Keep ref. Serve on sandwich bread or regular crackers.

SALMON BURGERS

SALMON BURGERS
3 Cans of 6 oz.boneless, pink salmons undrained
11oz. can corn with peppers, drained
11/2 cups crushed saltines
1/2 cup finely chopped onions
2 large eggs
1 large egg white


Put salmon in a bowl and mashed them. Stir in the drained corn. 1 cup of the cracker crumbs, the onion, the eggs and the egg white. Spread the remaing  1/2 cup crumbs on a plate.Form the salmon into 4 burgers and then press into the crumbs on both sides. Heat 1 tsp. of the oil in a large nonstick skillet over medium heat. Cook the burgers 3 at a time for 3 minutes each on each side until browned. Add more oil if needed.
