REFRIED BEAN ROLLUPS

1 (16 oz.) Can Refried Beans
1/2 Cup Salsa
1/2 Teaspoon Chili Powder
8 Flour Tortillas
1 Cup Shredded Lettuce
3/4 Cup or more Monterey Jack Cheese, shredded
In a medium saucepan put the beans, salsa, and chili powder. Warm this using medium heat. Spoon around 1/4 Cup bean mixture into the center of the tortilla and spread. Top with lettuce and cheese. Fold up and serve.

EASY CORN DOGS

3/4 Cups Milk
1 Cup Flour
1 Egg
1 Box Jiffy Corn Muffin Mix
2 Teaspoons Onion Powder
2 Teaspoons Garlic Powder
1 Pack Winners
1 Pack of Sticks

Wash the winners to wet them and then dip them in the flour. In a medium bowl add the egg and beat it. Next add the milk and then the jiffy corn muffin mix. Add the onion powder and the garlic powder. Dip the winners in the flour first and then in the mixture. Deep fry.

CHRISTMAS POPCORN

3 Bags Microwave Popcorn
6 Squares White Almond Bark
M & M's, peanut or plain
Peanuts, any type

Pop the popcorn and place it in a large paper sack which you spray with cooking spray to keep everything from sticking. Add the m&m's and peanuts. Melt the almond bark and pour over the popcorn. Close the sack and shake until all is well coated. You can add whatever you like to this. Cut up pretzels, craisins, raisins, crunch and munch or almonds. Any type of small candy will work also. You a combination of sweet and salty.

CARAMEL PUFFCORN

1 Large Bag Puffcorn
1 Cup Real Butter
11/4 Cup Brown Sugar
2/3 Cup Light Corn Syrup
1 Teaspoon Baking Soda

Combine butter, brown sugar and corn syrup in a medium saucepan. Heat on medium heat until the ings. are all melted together. Remove from the heat and add the baking soda. Wisk the mixture. This will get foamy, Spray a large cookie sheet and pour the puffs onto it. Pour the caramel mixtue over the puffs and stir until they are well coated. Bake at 250 for 45 minutes, giving a stir ever 15 minutes. Remove and pour onto wax paper to cool. Break apart when cool. Can spread melted milk chocolate over this when serving. Store in a air tight container.

ROASTED PECANS

1 Cup Pecan Halves
1 Tablespoon Butter or Marg. melted
Salt

Preheat oven to 200. In a small bowl, combine pecans and butter. Pour nuts onto a baking sheet and bake 1 hour, stirring every 15 minutes. Drain on a paper towel-lined plate and sprinkle with salt. Cool completely. Store in airtight containers.

PICKLED BOLONGA

2 Rolls (14oz.) each Beef Bologna
4 Cups Vinegar
1 Onion, sliced
1 Lemon, sliced
2 Tablespoons Pickling Spice
1 Bay Leaf
2 Cloves Garlic, minced
1/2 Teaspoon Whole Black Peppercorns
1/4 Teaspoon Crushed Red Pepper Flakes

Cut bologna into 1-inch thick slices, quarter each slice. Place in a sterlized 11/2 quart jar. Like a large dill pickle jar. In a medium saucepan, combine remaining ings. Bring to a boil and simmer 8 minutes. Remove from heat and pour over bologna to within 1 inch of top of the jar. Seal jar and ref. 1 week to allow flavors to blend. Store in ref.

CRUNCHY PAPRIKA CHICKPEAS

2 Cans ChickPeas, drained
3 Tablespoons Olive Oil
11/2 Teaspoons Coarse Salt
1 Teaspoon of Hot or Sweet Paprika

Preheat oven to 450. Drain and rinse the two cans of chickpeas. Pat dry with paper towels. Transfer to a rimmed baking sheet. Toss with the olive oil to coat. Spread in a single layer. Roast until deep brown and crispy, tossing occasionally 3 to 4 minutes. Sprinkle with 11/2 teaspoons coarse salt and the paprika. Roast 2 or 3 minutes more. Cool completely on a paper towel lined plate. Store in a air tight container at room temp. for up to 2 days.

OLD TIME WAY TO POP CORN IN THE MICROWAVE

Remember when we used to pop regular popcorn in a skillet. If you are out of microwave popcorn and have a white or brown lunch paper bag you can make microwave popcorn in it. Just take around a 1/2 cup or less of regular popcorn. 1 tablespoon oil or can just leave oil out. Put in the bag and let it cover the bottom. If using oil in it shake it to coat all of it. Fold over the top 2 times. Lay it on it's side like you do microwave popcorn and let it pop. Use the popcorn setting on the mircowave. Or pop around 2 1/2 minutes. Watch or it will burn easy. You can add butter and salt and whatever after it has poped. Wach the steam and do not get burned.
