ORANGE PUSH-UP SMOOTHIES

1 Can Orange Juice Concentrate, slightly thawed
1 Cup Milk or Half and Half
1/2 Cup Sugar or to taste but you really need this much to get the sweet flavor
1/2 Teaspoon Vanilla Extract
2 Cups Ice or to taste

Combine all ings., except the ice in a large blender and blend until smooth and creamy, taking care that the sugar has dissolved and is blended well. If needed can add a splash or more of water or milk. Add ice and blend until smooth. Makes (3) 8oz. drinks. If any is leftover it can be put in a bowl and used as orange sherbet.

GREEK YOUGURT MAC AND CHEESE

8oz. Macaroni Pasta
10 oz. American Cheese, grated buy the block and then grate
1/2 Cup Fat-free Greek Yogurt , like Fage
Salt and Pepper

Grate the cheese. American always melts better than cheddar. Cook macaroni pasta for 10 minutes in salted water until al dente or more if you like it a little softer. Reserve 1 cup pasta water before you drain the pasta. Drain the pasta and put back in the pot. Add 1/4 cup of the pasta water, the yogurt, and 1/3 of the grated cheese and stir until the cheese has melted. Then stir in the remaining cheese, one handful at a time, so it will not stick together. If to thick, then add some more of the pasta water. You can add some cooked chicken breasts to this if you like. Serve warm, and if there is any left over be sure and ref. To reheat, put in the microwave for 30 seconds at a time, if to thick, add 2 tablespoons of milk. Weight watcher points around 5 per serving.

REUBEN DIP

1 Lb. Corned Beef, chipped
8 Oz. Swiss Cheese, shredded
1 (14oz.) Can Sauerkraut, drained
8 oz. Cream Cheese, softened
1/2 Cup Thousand Island Dressing
Rye Crackers, Crisps or Party Bread

Mix all the ings. in a bowl. Before adding the kraut, squeeze out all of the liquid you can. Spoon mixture into a small sprayed casserole dish or pie plate. Bake at 375 for around 30 minutes or until bubbly and browned. Watch and don't let it scorch on top and don't over bake as the cheese will get hard.
Serve with a assortment of rye and pumpenickel crackers, crisps or party bread. Make sure the deli chips the corned beef or you can do it your self by slicing it thin as possible and rough chop the slices into small ribbons the size of your thumb.

WHITE MEXICAN CHEESE DIP

Just how much white mexican dip can you eat at one time. One bowl, or two. It is so good that you scrape the bowl with your finger and lick it off to just get that last bite.
Now if you live close to a Sam's Club I have bought mine there in a big container for around $8.00 and it tastes just like the one you get in the restaurants. But not everyone belongs to Sam's or may not be near one so here is a recipe that works almost as good as the store bought kind.
 You may need to adjust the peppers if you like it mild or hot and with this dip it always goes back to being thick. Just take you a couple spoons full out and put in a bowl and heat in microwave or can use the whole bowl if you are like me. lol. Just don't be on a diet.
You can cut this recipe down as the cheese is sort of expensive to buy. You find it in the deli section of most stores and make sure not to use white cheddar as it will not melt good .If buying from the deli just don't let them slice it into slices but buy it in a block. The cheese sells for around $5.00 a lb. But this make a large amount. The peppers are around $.90 a can.

11/4 Lb.Block White American Cheese(Land Of Lakes Only). cut into 1-inch cubes
1/4 Cup Canned Greeen Chiles, diced, more or less
2 Pickled Jalapenos, (canned) chopped, more or less
1 oz. Pickled Jalapenos Juice, more or less
2/3 Cup Whole Milk or Heavy Whipping Cream
1/2 Cup Cold Water
Pinch of Cumin (optional)

Cut the cheese up in chunks and put in a microwave safe bowl. Add the rest of the ings. and stir good. Put in the microwave on hig for 5 minutes , stopping to stir after every minute.I would use a medium bowl as it may run over the top. It might look watery but keep stirring and it will come together. It will be runny. This makes a soup bowl full. After it sits for a while it will thicken up. So if you do not want to use all of it ,then get out around 2 spoons full and put in the microwave and stir after 30 seconds and it will get runny again. I would start out by not adding to much of the peppers to it at first.
If you want to add the cumin, I would get some out of the bowl and then stir some cumin in a small amount to see if you like the taste of it.You can add more after you taste it but don't burn your mouth. Make sure it is kept ref.
 If you want to keep it warm in the crockpot then wait just before serving it before making it. Serve with tortilla chips or can be poured over vegs.

CHICKEN SPREAD SANDWICHES

16 oz. Chicken Breasts, cooked and chopped   6 Soda Crackers, crushed
2 Tablespoons Sugar
1/8 Teaspoons Salt
1 Tablespoon Catsup
Miracle Whip, to your liking
Boil the eggs and chop. Wash chicken and then cook till done and then chop. Put the eggs and chicken in a medium bowl and then add enough miracle whip to make it the right consistency. Then add the rest of the ings. and mix together and put on sandwich bread. Makes a good sandwiches. Keep ref.

VEGETABLE BURGERS

2 Cups Quinoa, cooked
3/4 Cup Cheddar Cheese, shredded
1/2 Cup Low-fat Cottage Cheese
1 Medium Carrot, fnely grated
1 Cup Zucchini, squeezed
3 Eggs
3 Tablespoons All Purpose Flour
2 Green Onions, including the white part
1/2 Teaspoon Splenda or sugar
1/4 Teaspoon Ground Cumin
1/8 Teaspoon Salt
1/4 Teaspoon Garlic Powder
1/4 Teaspoon Black Pepper
Olive Oil for frying

In a large bowl combine the cooked quinoa, cheddar cheese, cottage cheese, carrot, eggs, flour, green onions, Splenda, pepper, cumin, salt, and garlic powder. Heat a frying pan and a couple teaspoons olive oil over medium-low heat.  Mixture will be slightly sticky, so using a 1/4 cup measuring cup, drop mixture into pan and lightly flatten to 1/2 inch thick.  Fry until golden-brown, about 4 minutes on each side.   Makes 10 burgers.

COCONUT CHEESECAKE DELIGHT

1/2 Cup Butter or Marg, melted
1 Cup All Purpose Flour (I use Self-Rising if I don't have any All Purpose)
1 Cup Pecans, chopped
11/2 Cups Shredded Coconut
1/4 Cup Brown Sugar
2 Large Boxes Instant Coconut Pudding or 1 Coconut and 1 Cheesecake
4 Cups Milk
2 Cups Cool WHip

In a bowl, mix butter, flour, coconut, pecans and brown sugar. Spread evenly in a 9 x 13 pan that has been sprayed. Bake in a preheated oven for 25 minutes. Stir halfway through baking. You want it to crumble and not be one solid crust. Cool mixture. Mix pudding with milk and beat with mixer to combine. Fold in cool whip. Press 1/2 crumb mixture in the bottom of a glass baking dish and put the pudding over top of the crust. Spread  rest of cool whip over top of the pudding . Top with some shredded coconut and then the rest of the crumb mixture. Chill and serve. Keep ref.
 You can also make one layer of the coconut pudding using 2 cups of milk and then make another layer of the cheesecake pudding using 2 cups milk if using large boxes.Spread the coconut layer over the crust and then spread the cheesecake layer over the coconut layer. Can be combined or made into two separate layers.

EASY CHEESBURGER PIZZA

If your pizza crusts come 2 to a pack then this will make 2 pizzas.

1 Store Bought Pizza Crust, come 2 to a pack
1 Jar Pizza Sauce
1 Large Green Bell Pepper
1 Large Purple Onion
2 Roma Tomatos, sliced
1Lb. Ground Sirloin
1 Pack Mozzarella Cheese, shredded
1 1/2 Packs Cheddar Cheese, shredded

Dice up the onion and green pepper. In a skillet put in the sirloin meat. Do not crumble real small. Let fry and then drain. Add the green pepper and onion and let get soft. Place the pizza sauce on the store bought crusts.If using the canned pizza crust the put on a spraed pizza pan and let bake for 15 minutes and then add sauce. Next add the meat mixture. Then take the roma tomatoes and wash and dry them and then slice. Place these over top the meat mixture. This gives a roasted tomato flavor and is very good. Then add the mozzarella cheese. And last add the cheddar cheese. You want to add more cheddar then mozzarella cheese. Bake on 350 for 20 minutes. If you use ground chuck be sure and drain it very good.Very easy and good.

CADBURY EGG COOKIES

1/2 Cup Crisco Shortening (butter flavor)
1/2 Cup Unsalted Butter, softened
1 Cup Brown Sugar
1 Cup Granulated Sugar
2 Eggs, beaten
11/2 Teaspoons Vanilla
1Teaspoon Baking Powder
1 Teaspoon Baking Soda 
1/2 Teaspoon Salt
21/2 Cups Flour
6 Tablespoons Cocoa Powder
1 Bag Cadbury Miniature Eggs (10oz. Bag)

 Preheat oven to 350 degrees. Pour Cadbury eggs into a gallon size zip lock bag and with a rolling pin, crush the eggs. Or you can leave them in halves. In a mixing bowl, cream the butter and both sugars until light and fluffy. Add the beaten eggs and the vanilla. In a separate bowl, mix dry ings. and slowly add them to the wet ings. Add the Cadbury eggs and beat just a couple of times. Drop 2" size balls onto a sprayed or parchment lined paper on a cookie sheet and bake for 8 minutes. Do not overbake these as they are supposed to be soft and more like a brownie.

FRIED TOMATO PASTE FOR SOUP FLAVOR

If you like soup like I do you are always coming up with a big pot and I love to put different types of veg. combos in mine. This soup is real good and frying the tomato paste gives the soup the best flavor. If you don't think it does then just make a small kettle and see if you like it.

1 Tablespoon Oil
1 Onion , diced
3Oz. Tomato Paste
1 Pepper
1 Cup shredded Cabbage
2 Shredded Carrots
3 Florets Cauliflower, chopped
1 Tablsepoon Chopped Basil
1 Cup Beef Broth
Salt to taste

In a medium skillet heat the oil and fry the onion until it turns light brown. Add the tomato paste and fry stirring occasionally, scraping the bottom  of the skillet, until it starts to stick.. Take out and put in a medium kettle for making soup in. Add water, the vegs.and the onion tomato mixture, the basil and bring to a boil. Reduce to low heat, and cook for 25 minutes.

911 AND THE CHICKENS

There are still a few people who love fresh eggs direct from the chickens. Some still have chicken coops and have fresh eggs every day and not have to go to the store and buy them. It looks like the chickens even go on strike as the price of the eggs keeps going up and up.
One of my friends was telling me about her son who has around 9 hens and a rooster. Now we know how mean a ole red rooster can be. But hens they are not that mean are they. Any way he was out in  the chicken pin feeding his chickens and he then tried to catch one of them. Of course the hen did not want to be caught. So it began pecking him and some of the other chickens came where he was at and must have done the same thing.
He heard sirens and looked up and they came and stopped at his house. Now what has happened. We all dread to see a cop car stop at our house. Or get that phone call around 3 or 4 in the morning. Knowing something has happened.
Out got the officers and wanted to know what was going on. We got a 911 call from your house.
 He did not know what was going on inside as he was all right outside. So in the house they went and his wife was ok and so was his grandson.
 He ask who called the cops. Not me said his wife. I did, said his grandson. Why did you call them.
 I looked out the window and the chickens was pecking your hands and I thought they were going to hurt you so I was taught to call 911 if there is someone in trouble. Now the cops all knew them good and started laughing. Well we are all right so I guess you can chalk this up to a child learning and listening real good. lol. The cops was laughing as they were leaving.
Now just how old was this little boy, only 3 years old. So don't tell  me that small children can't learn real quick and listen to what everyone is saying. They may not tell you but they take everything in. lol..........

PECAN BREAKFAST BAKE

Topping:

1/2 Cup Melted Butter or Marg.
1/2 Cup Hungry Jack Butter Flavored Syrup or any butter flavored pancake syrup
1/2 Cup Firmly Packed Dark or Light Brown Sugar
1 Cup Coarsely Chopped Pecans
2 Teaspoons Cinnamon


Crust Base:

2 Cups Self-Rising Flour
1/4 Cup Crisco, chilled
2/3 Cup Buttermilk

Topping:
1/3 Cup Cream Cheese Frosting or more to liking
Pre-heat oven to 400F. and spray a 8 x 8 baking dish. Set aside. In a medium bowl, combine the melted butter, sryup, brown sugar, pecans and cinnamon. Set aside. Place flour in a large bowl. Using a pasty cutter, or fork cut in shortening until the mixture resembles coarse crumbs. Add the buttermilk, stir just until dough leaves the sides of the bowl. Lightly flour your hands so the dough wont stick to them. Press dough into the bottom fo the baking dish. Using a fork, poke a lot of holes into the top of the dough. Pour the syrup mixture over the dough and spread with a sprayed spatula. Bake 15 to 18 minutes or until the dough rises and the edges are golden brown . The topping will be jiggly. Let cool. Heat the cream cheese frosting in a microwave for 10 to 15 seconds or until melted. May have to put this in a bowl. Stir and drizzle over the top of the cake.Cool around 15 minutes. Slice and serve warm. You can make a powdered sugar glaze intsead of using the cream cheese frosting by mixing some powdered sugar and milk together in a bowl and wisking good and drizzle over the cake.

RAY S. SMOKED SAUSAGE PACKS

5 Smoked Sausages, the ones that look like hot dogs
1 Can Karut, chopped or shredded
3 Medium Potatoes
1 Medium Onion
Salt and Pepper

Take foil and make it big enough for a pouch. Spray with cooking spray not real heavey. Take potatoes and peel and wash them good. Slice a layer of potatoes onto the pouch. Next make a layer of sliced onion. Then put the karut in next. Drain some of the juice off if using the karut in the bag. You can slice the smoked sausage in half long way or can leave it whole. Put it on top of the kraut. Fold the pouch over so it is tight and put in oven and bake for 30 minutes. Make these up in single pouches not putting them altogether. Can also make these on the grill. Salt and pepper if you like. They will be very hot when you open them up so don't get burned on the steam. Can serve these with rolls or put them on a brat bun.

FELICIA G. CHICKEN CASSEROLE

With so many chicken casseroles out there I have found that this one is so easy and very good. So Trina this is for you. Hope you like it like we do. So glad that you are doing so much better and can eat now. Just don't eat to much of this lol. As it does have a lot of salt in it from the soups. I don't know what they feed those chickens that you get at K.  down in Nashville ,I believe they have some of the biggest chicken breast going. One would feed 3 people they are so huge. lol. But they are very good and tender. These Ky. chickens must be on a diet.

3 Chicken Breasts
1 Box Stove Top or Great Value Dressing Mix
1 Can Cream of Chicken Soup
1 Can Cream of Mushroom Soup
1 Can Of Chicken Broth or 1/2 Box
2 Sticks Blue Bonnett or Parkey Marg.

Wash chicken breasts good and then cook until done. Spray a 13 x 9 pan. Shred the breasts, if they are real big, just start with one and don't shred real little.Make it like chicken tenders cut in half. Put a layer of the chicken all over the bottom of the pan. Take the soups and pour into a medium bowl and then mix in the can of chicken broth or half of a box of broth. Stir them up real good and then pour over the chicken. It will be soupy. Next make up the dressing and put over the soups. Take the butter and slice it thin and put over top of the dressing and bake for 30 minutes. I put foil on mine until the last 10 minutes. It will burn on top real easy. It is very hot so make sure you let it cool down some before serving.

JENNIFFER S. OREO CHERRY TRIFFLE

2 Boxes Instant Cheesecake Pudding
2 Cups Cold Milk
1 Large Cool Whip
1/2 Cup  Sour Cream
1 Large Cherry Pie Filling, 21 oz. can
20 Oreos, crushed
1/2 Teaspoon Almond Extract
1/3 Cup Almonds, chopped


Crush the oreos and sit aside. Combine milk and pudding. Beat until thick and mix in 1/2 cup sour cream and 1/2 cup cool whip. In a small bowl, pour in the cherry pie filling and mix in the almond extract. In bottom of a glass triffle bowl put a layer of the crushed oreos. Then a layer of the pudding mixture and next a layer of cherry pie filling. Then add a layer of cool whip. Repeat layers. Sprinkle the chopped almonds on top or can put on top of each cool whip layer. Chill for one hour or longer. Keep in ref. Very good.

"COFFEEMATE BOTTLE REUSE"

Do you just throw your coffeemate bottles in the trash when you are finished with them. Wash them out good and dry them and then reuse them for different things. Did you know that under the coffemate peeling they are clear. These bottles can be used for storing your rice, dried beans, garden seeds, snacks etc. in them.
They have a pouring spout to use also on them. You can take and freeze lemonaide or drinks with not fizz in them and then take them out and use for to keep things cold at  a picnic or going on a trip. If doing this I would slip them down in a ziplock bag in case the lid may become open so you will not have a mess on hand. Then when they unthaw you can drink the lemonaide or punch.
 You can make up some simple syrup for your tea and keep it stored in them. You can even store sugar in them and it will pour out good as long as they have been cleaned good and then dryed. So check these out and use them. You can even store washers or nuts or screws in them.

HONEY-APRICOT CHICKEN TENDERS

2 1/2 Lbs. Chicken Breasts, cut into small strips
2 Tablespoons or more of Apricot Presserves or Jam
1/2 Cup  Honey
2 1/2 Cups Panko Bread Crumbs

Preheat oven to 350. In a small bowl, combine honey and presserves. Wash chicken and dry. Brush honey mixture on both sides of the chicken. Dredge in bread crumbs. Place chicken on a sprayed baking sheet. Bake for 20 minutes on each side or until lightly brown and no longer pink. Make sure it is done.

GREEK YOGURT SNACK

1 Small Greek Yogurt
Honey
Toasted Walnuts, chopped

Take the walnuts and toast in the oven. Do not let scorch. Let cool and chop. Put the yogurt in a small dish and drizzle some honey over it and then add the chopped walnuts. A very fast and good snack.

BRINGING OUT BANANA FLAVOR

Did you know that if you put just a tiny pinch of salt on a piece of sliced banana, it will bring out more of the banana flavor. Just like putting a pinch of salt in sweet rice for breakfast will also bring out more flavor of the rice. My sister-in-law was making sweet rice, (which is just cooked rice with some butter and sugar added to it after it is cooked) ,and serve with hot biscuits for lunch or breakfast and my mother-in-law wanted to know if she had added some salt to the rice. What for, it brings out the flavor of the rice more. Never to old to learn something. If you will notice most of the time now in tv they add a small pinch of salt to cookies, cakes and sometimes candy. But don't use a lot or they will be to salty. Brings out flavor.
I know when my mom always made breakfast gravy she would put a pinch of sugar in her gravy with the salt.

YOGURT CHOCOLATE SUNDIES

1 Small Vanilla or plain Yogurt, frozen
1 Plank of the  Low-fat Graham Crackers, crushed
1/4 Cup Sugar-Free Chocolate Syrup
Marshmallow Fluff

In a glass sundie dish sprinkls some crushed graham crackers on the bottom of it. Next put some of the frozen yogurt and then add more crushed graham crackers over the yogurt. Pour some sugar-free syrup over the top of this and then can add a little marshmallow fluff to the top.

CARROT AND CREAM CHEESE SANDWICH

1/2 Block Cream Cheese, or Pineapple Flavored Cream Cheese in Tub
2 Slices Sour Dough or Thick Sliced Bread
Shredded Carrots
Dried Cranberries
Raisins
Toasted Sunflower Seeds

Put the cream cheese on both slices of bread. In a bowl mix the carrots, dried cranberries and raisins and sunflower seeds together. Spread on cream cheese and put the other piece of bread on top. May not sound very good but this is.

SLICED EGG SANDWICH

3 Boiled Eggs
Lettuce
Tomato
Roasted Red Pepper
Mayo
2 Slice Whole-Grain Bread
Salt and Pepper

Boil eggs, let cool. Peel. Take and lay a piece of bread on a plate. Slice the eggs and put on the bread. Add a little salt and pepper if you like. Then add the tomato and lettuce. Put some mayo on the other slice of bread and enjoy. Can toast the bread also. Serve with some yogurt or a cheese stick.

BREAKFAST BURRITO'S

3 Flour Tortilla
1 Can Drained Black Beans
4 Eggs, Screambled
Sour Cream, to taste
1 Jar Salsa

Scramble the eggs. Lay tortilla on a plate. Put some eggs on it and then some of the black beans and salsa. Add some sour cream on top and roll up. Very good. I leave out the black beans as I don't care much for them. Can add some stir fried green and red peppers to this if you like. Serve with orange wedges.

STEFEN'S OREO BALL CANDY

1Lb. Oreo Cookies, 3 sleeves
1 (8)oz. Cream Cheese, room temp.
1 Lb. Melting Milk Chocolate, if using milk choc.
1  Lb. Melting White Chocolate, if using white choc.

Using a food processor, grind cookies to a fine powder. If you don't have one put in a ziplock bag and shut and use your rolling pin or hammer to crush them. Using mixer, blend cookie powder and cream cheese until throughly mixed (should be no traces of cream cheese). Roll into small balls and place on wax-lined cookie sheet. Ref. for 45 minutes so you can handle them when dipping in chocolate. In a double-boiler, melt the white chocolate. If just using the white choc. (which I like best )then start by melting 1/2 lb. and may have to melt the other half of it. Dip balls and coat thoroughly. With a slotted tool, lift balls out of chocolate and let excess chocolate drip off. Place on wax-paper lined cookie sheet. If you want to use both milk choc. and the white choc. them melt them in two seprate kettles. When finished coating with a fork drizzle the milk choc. over the white choc. balls or if making milk choc. then drizzle some white choc. over milk choc, covered balls. Let cool. If not eating all the first day then make sure you store them in a air tight container in the ref. It has cream cheese in them and might mold.

MINI MEATBALL SANDWICHES

They were demo these at Sam's Club also the other day and they are so good and very easy and fast to make.

1 Jar (32)oz. Classico Tomato and Basil Sauce
2 Lbs. Casa Di Bertacchi Meatballs or around 52 mini meatballs
3 French Baguettes
15 Mozzarelia Cheese slices Or can use shredded mozzarelia cheese

In a crockpot or a large pot on the stove on medium heat. combine the tomato and basil sauce with the meatballs. Bring to a simmer then reduce heat and cook for 18-20 minutes (this is in the crockpot)stirring occasionally until meatballs are heated through(will not take this long if fixing them on the stove). Cut baguettes into 4 inch segments and then again lenghthwise. In other words just split them but don't cut them all the way into. Place 3 meatballs in each sandwich. Add cheese and some of the sauce. Or you can use the football shaped dinner rolls found at most stores that are already made and split them and put 3 meatballs on the bottom part and then some cheese on top of the meatballs and then put the other piece of bread on and I like to sort of smash them down. They are so good.

SWEET MEATBALLS

We were at Sam's Club the other day and they were demo these and they are so good and so simple to make.

11/2 Cup Smucker's Strawberry Jam
1 Cup Barbecue Sauce. I think they used Jack Daniel's
2 Lbs. Case Di Bertacchi Meat Balls

In a crockpot combine the srawberry jam and barbecue sauce with the fully cooked meat balls. Bring to a simmer, then reduce heat and cook 18-20 minutes, stirring occasionally until meatballs are heated through. I make mine with grape jelly but I like the taste of this better.

Also have another recipe I am putting on of Mini Meatball Sandwiches and we loved these.

CUCUMBER SANDWICHES

These may not sound very good but are. I like to make them witht the long english cucumbers that you can find now that it is winter. But of course they are best with home grown cukes in the summer.

1 Loaf White or Wheat Bread
3 oz. Cream Cheese
2 Teaspoons Mayonnaise not Miracle Whip
1 Teaspoon Minced Fresh Garlic
2 Teaspoons Dry Italian Seasoning
Salt and Pepper

In a food processor or medium bowl add the cream cheese, mayo and garlic, italian seasoning, salt and pepper and mix or blend  until they are all blended good. Spread on 4 pieces of bread. Take and wash cucumbers good and dry. You can either peel or not peel them. Slice thin and put over top the cream cheese mixture. Sprinkle with salt and pepper. Put the other piece of bread on top and then you can cut the crust off the bread and then cut into 4 pieces. Very good.

ORANGE CAKE

Did you buy a lot of oranges for Christmas and have got tired of eating them. Then try this orange cake recipe and use up some of them for the juice it calls for and for the zest. Never have used zest before. Just take a orange and wash good and then take a grader with the small holes and run your orange up and down it. It may take two oranges or more to get the zest this recipe calls for. Just don't go down to the white part of the orange as it will make it bitter. Do it lightly.

1 (18 oz) Box Yellow Cake Mix
1 (3 oz) Box Instant Lemon Pudding Mix
3/4 Cup Fresh Squeezed Orange Juice 
1/2Cup Canola Oil
4 Eggs
1 Teaspoon Orange Zest
1 Teaspoon Lemon Zest

Spray and flour a 10 inch bundt pan. Preheat oven to 325 degrees F.In a medium bowl combine cake mix, pudding mix, orange juice, oil, eggs and citrus zests. Beat on low until blended. Scrape bowl,and beat on medium speed for 4 minutes. Pour into prepared bundt pan. Bake 50-60 minutes (until set.) Allow to cool in pan for 10 minutes. Turn out onto cake plate and cool completely.

Glaze:

1/3 Cup Orange Juice
2/3 Cup Sugar
1/4 Cup Butter or Marg.

In a medium saucepan over medium heat, cook the orange juice, sugar and butter or marg. for two minutes. Drizzle over cooled cake. Serve cake with fresh whipped cream and canned peaches.

BEST FRYS TO BUY

Most all southern people love potatoes in any fashion or form. Fried is our best way of fixing them. I can say one thing I have a son-in-law that can fix some of the best fried potatoes you can put in your mouth and I have tried to copy him but just can't get them to come out tasting like his. lol.
 He cuts them paper thin and then takes a small pancake turner and flips them and don't use a lid on his when frying.
 Oh well, I have done the same thing but they never taste like his and he says that the Idho in the string bag is the only kind to buy. Well, me all I have is ole garden potatoes that have been planted in a garden just like the baged ones but they still don't taste like his. lol.
Now when it comes to french frys, I have tried all kinds of brands with different kinds of oil to fry them in. I have tried frying them in a fry daddy and a kettle on the stove but trust me a kettle will work just as good as a fry daddy but just watch the grease and not let it get to hot or it will explode without nothing in it.
And always, do not ever, leave it on the burner after you take the frys out as it is still hot, always, scoot it off the burner.
Anyway back to the frys. I have tried the expensive ones .The store brand ones and home frys and the best ones I have found is the Walmart brand , Great Value.
They get crisp and are not soggy and don't turn dark brown unless you let them fry to long. I just love them. I am not trying to promote them but they are just so good.
One fry leads to another and before you know it, you may have ate 15. lol. or more. lol.
 I use Canola Oil to fry mine in. Some frys get to crisp and all you have is like a shell to eat. Some get to extra crispy.
But the Great Value frys will get done on the inside and crisp on the out. Just don't have the oil to hot.
 If you use gas then keep it at a lower temp. I am just now learning how to use gas. I love it way better than electric. But watch out or you will sure have some burned hands grabbing hold of the handles on the pots and skillets without a pot holder.
Oh and if you like baked potatoes, just fix them in the oven and not try to microwave them. I like mine in the oven the best. I was trying to fix one for my grandaughter and put it on 10 minutes and had it wrapped in a wet paper towel. I left it in the oven after the timer went off as I was doing something else and when I got it out it was hard as a rock and my grandaughter said what is wrong with you mamaw can't you cook no more. That from a little one is sure embarrassing. lol. So I had to fix her another one and it was not done enough. So I will just stick to my ole time way.
 Everybody loves my baked potatoes. But most people when putting the sour cream in just don't put enough and sure don't put enough butter. lol. We forget about the calories when eating them around here. To me nothing makes a baked potato no better than frying up some sliced green peppers and onions to put on top or use on the side with a hot baked potato and of course we have to have that shredded cheese all over the top..........

MEXICAN CHORIZO SAUSAGE

If you love hot food then this recipe is for you. It is hot. The mexican chorizo sausage is found at Walmart back where the mexican cheese dip is near the deli. Most time it is in one long roll.

2 Mexican Chorizo Sausages
1/2 Cup Onion, chopped finely
1/2 Cup Red Chili Sauce
2 Eggs, scrambled

In a medium skillet put the sausage in after you have removed it from the casing. Crumble it. Then add the onon and cook, stirring frequently for 3 to 4 minutes or until the sausage is cooked through but not dry. Serve with desired amount of warm chili sauce on top. This is good to eat with scrambled eggs.

SOUTHWESTERN CROCKPOT CHICKEN

1 Pack Taco Seasoning
3 Chicken Breasts
1 Can of Mild Rotel
1/4 Cup Olive Oil
1/4 Cup Water

Take the pack of taco seasoning and sprinkle it on the bottom of the crockpot. Wash chicken breasts good.Place them on top of the seasoning mix. Pour the can of rotel over the top of the chicken breasts and then add the olive oil  and water over the top. Do no stir. Cook on low for 4 hours and take out. Can shred this and use on tacos or use as a main dish.

SOUTHERN BBQ POTATOES

1Pack of Bacon Bits or 5 Slices Bacon, cooked and crumbled
2 Unpeeled Large Potatoes, washed good
3 Tablespoons Olive Oil
1 Teaspoon Garlic Powder
1/2 Teaspoon Salt
1 Teaspoon Black Pepper
1/4 Cup Barbecue Sauce
1 Cup Shredded Cheddar Cheese
1/2 Sour Cream  Or Ranch Dressing for Dipping

I like to use the real bacon pieces that is found at Walmart next to the salad dressings that is in the bottle. These bacon pieces are real and are the Great -Value Brand in a small bag. If you have any left over make sure you put them in the ref. as they will mold in no time at all. Pre- heat oven to 400. Line a baking sheet with foil and then spray lightly with cooking spray. Cut the potatoes into 1/4 inch slices and then tossin a large ziplock bag with the olive oil, garlic powder ,salt and pepper so all the potatoes will be coated. Arrange the potatoes in a single layer on the baking sheet. Let bake until lightly browned around 15-20 minutes. Brush with barbecue sauce, then top with the shredded cheese and bacon bits. Put back in oven and let bake until the cheese melts.  Can put sour cream or ranch dressing on top of them or on the side to dip in.

NASHVILLE CHRISTMAS LIGHTS

Well there was no snow this year in Nashville for Christmas but it sure was cold.
 We all decided to go out and eat and go look at the Christmas lights. Don't know if you have ever heard of Lipton Lights (liptonlights.com)but it is a sight to go see. I think they have some over in Gatlinburg, Tn.
 These lights go on and off to the music which you listen to in the car on your radio. I have never saw anything come up with this. There are around 8,500 lights and one house down in Franklin, Tn. had them on display.
 You could sit half the night and just watch them. It is free but you can leave a donation in the box.
We also went to a display that a man had been doing this coming year will make 30 years. His son got killed in a car wreck and his son always loved to decorate with lights so his dad kept up the tradition and has added to it each year.
There is ever type of scenes that you can think of. Santa playing ball. Kids swinging. Kids seesawing. Kids going up ladders. Helicopters flying.So many that I can't remember them all. I have never saw so many different lights along with the scenes. There were car loads of people getting out and looking at all of it and even limo's coming in to look at this. The man that owned the house was out directing the traffic. That takes love to stay there 7 days of the week for around 6 hours each night for around 4 weeks doing this.
We then went and saw the house that won it for the best Christmas lights and it was something else also. Then we went on to another house that was lit up with more scenes then the one that won it.
I wish every child could just go see this. It is what Christmas is all about in a child's eyes. Of course we don't wont to forget the real meaning of Christmas but this is just something that is breath taking to see and you ohh and ahh all the time while looking at all of it. No matter how many times you go back and see it you will find something different to look at each time. So make plans if  you can to go check out the lights in the Nashville, Smyrna area next year. They are all close together and do not take a lot of driving to go see them.

CRAZY ME- Car with no driver

I was stopped at a red light down in Franklin, Tn. and just happened to look back in my mirror. The car behind me had no one in the driver's seat.

Now is this my eyes playing a trick on me or are they really no one back there. It was at a large intersection and it took a while for the light to change. So I kept looking back and no one was there. I thought, have they passed out or are they sick and laying down. What will happen when this light changes.

Is the car going to roll and hit me in the backend and cause me to hit the car in front of me. All these things was going thru my mind as it was Christmas time and the traffic was bumper to bumper.

I just happened to glance out of my passenger mirror and low and behold there was a man sitting on that side of the car. I looked again and there he was. Now this was a older type Honda and just why was he sitting on the wrong side. I guess he must have got the car from someone who delivered mail. lol.

But boy it sure had me fooled for a spell. I thought for a time that there really are ghosts. lol.
