Banana Nut Muffins

Cooking Spray
4 Tablespoons Unsalted Butter
1/2 Cup Dark Brown Sugar
4 Very Ripe Bananas

Muffin Base:
1 Cup All-purpose flour
2 Teaspoons Baking Powder
1/2 Teaspoon Grated Nutmeg
Pinch Of Salt
1/2 Cup Dark Brown or Dark Brown Muscovado Sugar, packed
1/3 Cup Canola Oil
2 Large Eggs at room temp.
3 Tablespoon Milk
3 Tablespoons Dark Rum or Rum Extract
1 Teaspoon Vanilla Extract

Spray a 12 cup muffin pan with cooking spray. Place 2 teaspoons of butter and 2 teaspoons of brown sugar in each muffin cup. Bake until the mixture in each cup is melted and bubbly, about 10 minutes. Remove the pan from the center rack and let cool for a few minutes. Peel the bananas and cut them on a diagonal into 48 thin slices. In each muffin cup place two bananas slices on the bottom and two banana slices along the sides.
  

To make the muffins, sift together the flour, baking powder, nutmeg, and salt in a medium sized bowl. In a separate bowl, whisk together the brown sugar, oil, eggs, milk, rum, and vanilla. Make a well in the center of the dry ingredients, add the egg mixture, and stir just until blended. Do not overbeat. Divide evenly among the prepared muffin cups, filling them as full as possible (be sure to divide them evenly, they will be about 3/4 way full).



Bake until the center of a muffin springs back when pressed gently with your finger, about 18 minutes. Immediately invert and unmold the muffins onto a wire rack. Cool briefly and serve. The muffins are best the day they are made.

Bell County Bus Garage Rolls

These are amazing yeast rolls that are made at the annual bell county bus garage christmas party. It is a sought after recipe that not many can get. I guarntee you will love these and make more the next day. 

Ingredients:

  • 2 cups milk
  • 1 teaspoon salt
  • 2 packs yeast
  • 1 tsp sugar
  • 1 1/2 sticks butter
  • 1/2 cup sugar
  • 1/2 cup Cisco shortening
  • 1/2 cup warm water
  • Around 4 to 6 cups flour (UNBLEACHED White Lilly Bread Flour)
Directions:
Put the 1/2 cup of sugar, Cisco,and salt in a large bowl. Scald the milk and pour it over the sugar, Cisco and salt mixture. Stir until blended. Let cool to lukewarm. 

Meanwhile put 1/2 cup warm water in a large glass. Add 1 tsp., sugar and 2 packs of  yeast. Let the yeast rise.  Melt the butter to use later. When the mixture in the bowl is luke warm and the yeast has risen mix them together. Add flour until the dough is a little stiff. 

Then knead the dough in  pile of flour until enough flour is mixed in to make it stiff enough to roll. Knead it about 6 more times. 

Roll the dough out to 1/2 inch thickness. Cut the dough in circles with. Cutter or rimmed glass. Dip each circle in butter and stretch and then fold over for Parker house style. 

Place on pan or rimmed cookie sheet and let rise until double in size. Bake at 400 degrees until  golden brown.

Additional tips for this recipe:
The water is the right temp. If you put your finger in it and it is warm to the touch, the milk needs to be the same way.  Make sure you use UNBLEACHED WHITE LILY BREAD FLOUR for these.

STRAWBERRY PECAN BREAD

2 Cups Fresh Strawberries
3 1/8 Cups All-purpose Flour
2 Cups White Sugar
1 Tablespoon Ground Cinnamon
1 Teaspoon Salt
1 Teaspoon Baking Soda
1 1/4 Cups Vegetable Oil
4 Eggs, Beaten
1 1/4 Cups Chopped Pecans

Preheat oven to 350 degrees. Butter and flour two 9 x 5 inch loaf pans.
Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.
Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry Ingredients are just moistened. Stir in pecans. Divide batter into pans.
Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans on wire rack for 10 minutes. Turn loaves out, and cool completely.

BUTTERMILK AND ONION CORNBREAD

I love cornbread any way you want to make it. This is a good recipe for it that is a little different. The onion is what makes it good. If you have any leftover bacon you can chop it up and put it in this bread.

1Tablespoon Bacon Drippins or Veg. Oil
1 Cup Cornmeal
1/2 Cup Flour
11/2 Teaspoons Baking Powder
1/4 Teaspoon Salt
1/4 Cup Minced Onion
1 Egg, beaten
1 Cup Buttermilk

Preheat oven to 400. Put the bacon drippings in a 8 inch iron skillet and up the sides also to keep it from sticking or can spray pan and then add the drippings. Make sure drippings has melted and the skillet is hot (5 to 8) minutes but use a pot holder as the handle may be hot to the touch. Put all the dry ingredients and the onion in a bowl and mix. In another bowl, beat the egg. Add 1 cup buttermilk and mx with the egg. Add the wet ingredients to the dry ingredients. Stir briefly with a fork, then fold the ingredients together with a spatula until moistened. The stirring/folding should only take around 30 seconds. Batter will be lumpy. You just do not want to over stir this. Pour batter into the skillet. Cook in oven for 25 minutes. When done put on a plate at once. Just dump it out on a plate and let it cool or it may stick to the skillet if left in the skillet. Serve with some I can't believe it's not butter or some honey.

TROPICAL PINEAPPLE BREAD

3/4 Cup Butter or Marg., softened
1(8oz.) Box Cream Cheese, softened
2 Cups Sugar
1 Teaspoon Vanilla
2 Eggs
3 Bananas, mashed
1(8oz.) Can Crushed Pineapple, drained
1 Cup Coconut
1/2 Cup Maraschino Cherries, drained and quartered
3 Cups Plain Flour or can use self-rising and leave out baking powder and salt
1/2 Teaspoon Baking Powder
2/3 Teaspoon Baking Soda
1/2 Teaspoon Salt 

Preheat oven to 350 degrees and spray two loaf pans. Mix together butter and cream cheese, add sugar, vanilla and eggs (one at a time). In a separate bowl combine flour, baking powder, baking soda and salt. Add to wet ingredients a little bit at a time until well incorprated. Add banana, coconut and pineapple to mix. Spoon batter into bread pans. While spooning the batter in add cherries (do not add them in while mixing batter it will turn your batter pink). Bake for 1 hour or until a toothpick comes out clean.

BLACKBERRY LOAF BREAD

This bread is like banana bread. It is so good with a cold glass of milk. I like it better than banana bread. You can put some nuts in it if you like. I would put a few chopped walnuts.

11/2 Cups All-purpose Flour
1 Teaspoon Salt
1 Teaspoon Baking Powder
1/8 Teaspoon Ground Cinnamon
11/2 Cups Blackberries, fresh or frozen
1 Cup Sugar
1/2 Cup Milk
1/3 Cup Butter or Marg. melted
2Large Eggs
1 Teaspoon Lemon Zest
2 Tablespoons Lemon Juice

Preheat oven to 350. In a medium bowl stirr together flour and next 3 ings. Stir in blackberries. Wisk together sugar and next 5 ings. until thoroughly blended. Add to flour mixture, stirring just until blended. Pour into a sprayed loaf pan. Bake at 350 for 1 hour and 15 minutes or until a toothpick inserted comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan and let cool on a wire rack for 1 hour.

BANANA ORANGE BREAD

3 Medium-sized Ripe Bananas, mashed
1 3/4 Cup Sugar
3 Eggs
3 1/2 Teaspoons Vanilla Extract
3/4 Cup Orange Juice 
2/3 Cup Butter, melted
3 Cups Flour
31/2 Teaspoons Baking Powder
3/4 Teaspoon Salt
1 Teaspoon Baking Soda
1 Cup Chopped Walnuts and Pecans

Preheat oven to 350 . Combine bananas, sugar, eggs vanilla, orange juice, and butter and mix until creamy. In another bowl, sift toghether flour, baking powder, salt, and baking soda. Add nuts. Add flour mixture to banana mixture and beat just until combined. Spray 2 loaf pans. Pour mixture into them and bake for 35 to 45 minutes or until done.

LEFTOVER HAMBURGER BUNS USE

Got some hamburger buns that are get sort of old. Don't throw them away. Take and spread some butter or marg. on top of them and then sprinkle with garlic powder or salt. Then spread some sour cream on top of this and last add some coby jack or mexican blend cheese. Put in a pan and bake in oven on 350 for 10 minutes or until cheese melts. Slice them in strips. Good to eat by their self or with any type of pasta.

JALAPENO CHEDDAR CORNBREAD FITTERS

1/3 Cup Sour Cream
1 Egg
1 Tablespoon Pickled Jalapeno slices, minced
1 Cup White Cornmeal
1/2 Teaspoon Salt
1 Cup Shredded Cheddar Cheese
1 Tablespoon Sugar

Mix sour cream and egg together. Add jalapeno, salt sugar and cheese and stir. Add cornmeal. Stir until cornmeal is moistened, add more liquid milk or water if needed. The batter should be thick. Heat an iron skillet and add one inch of oil. Drop the batter by tablespoonfuls into the hot grease and flatten down witht he back of a spoon. Don't crowd them in the pan. Turn after 3 or 4 minutes or when brown. Remove from pan after both sides are brown and drain on paper towl. Sprinkle with salt while still warm.

EASY NO RISE ROLLS

1 Pack Yeast (2 1/4 Teaspoons)
2 Cups Warm Water
4 Cups Self-rising Flour
1/4 Cup Sugar
11/2 Sticks Butter, melted

Add yeast to water and let it bloom.
Add remaining ingredient to the bowl, after the yeast has bloomed, adding flour last. Mix and pour into greased muffin tins.Makes20 rolls out of this batch.This doesn’t make a light and airy yeast roll. It’s a little bit denser but has a great taste.Bake at 400 degrees for 20 minutes.

HAWAIIAN COCONUT BREAD

1 (12oZ.) Bag Frozen Dinner Rolls, thawed
1(10oz.) Can Coconut Milk
3 Tablespoons Sweetened Condensed Milk

3/4 Cup White Sugar, to taste

Coat a 9x13 inch baking dish with cooking spray. Coat your hands with cooking spray or shortening, and roll the dough balls in your hands so that they have a light coating. Place in the prepared dish. Set aside in a warm place to rise until doubled, up to 2 hours.
Preheat the oven to 350 degrees. In a small bowl, stir together the coconut milk, sweetened condensed milk and sugar. Pour this mixture over the top of the rolls as evenly as you can.
Bake for 30 minutes in the preheated oven, until golden brown. Let cool for a few minutes before separating and serving.

SAUSAGE CHEESE MUFFINS

1Lb. Hot Ground Pork Sausage
1 Teaspoon Onion Powder
3 Cups All-purpose Baking Mix
1(10.75oz.) Can Condensed Fiesta Nacho Cheese Soup
2 Cups Shredded Cheddar Cheese
3/4 Cups Buttermilk or water or milk

Cook sausage and onion in a large skillet over medium to med-high heat, stirring until it crumbles and no longer pink. Drain and cool.
Preheat oven to 375. Combine sausage, baking mix, and shredded cheese in a large bowl. Make a well in the center of the mixture. Stir together the soup and water; add to sausage mixture, stirring just until dry ingredients are moistened. Spoon until lightly greased mini muffin tins, filling to tops of cups. Bake for 15-18 minutes or until lightly browned.

LEMON-RASPBERRY YOGURT BREAD

2 Cups All-purpose Flour
2/3 Cup+1 Tablespoon Sugar, divided
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Fat-free Lemon Yogurt
2 Large Eggs, beaten
4 Tablespoons Unsalted Light Butter, melted and cooled
Grated Zest of 1 Lemon
1 Teaspoon Vanilla Extract
2 Cups Fresh Raspberries

Preheat oven to 350 degrees F. Coat a 1-lb. loaf pan with cooking spray. Combine flour, 2/3 cup sugar, baking powder, baking soda and salt in a bowl. Combine yogurt, eggs, butter, zest and vanilla in a second bowl. Toss raspberries with remaining 1 Tbsp. sugar in a third bowl.
Fold yogurt mixture into dry mixture; stir to combine completely. Gently fold in raspberries. Scrape batter evenly into loaf pan. Bake until top is golden and springs back when you gently touch it, about 60 minutes. Serve warm .

CORNMEAL-CHEDDAR BISCUITS

11/2 Cups All Purpose Flour
1/2 Cup Yellow Cornmeal
2 Teaspoons Sugar
1 Tablespoon Baking Powder
1/4 to 1/2 Teaspoon Salt
1/2 Cup Butter, softened
1/2 Cup or More Cheddar Cheese
1 Cup Milk

If using self-rising flour do not use baking powder or salt. In a bowl, combine flour, cornmeal, sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs. Stir in cheese and milk just until moistened. Drop dough by 1/4 cupfuls onto an ungreased baking sheet. Bake at 450 degrees for 12 to 15 minutes, until lightly golden. Makes one dozen.

ONION CHEESE BREAD

1/2 Cup Onion, chopped 
1 Egg, beaten
1/2 Cup Milk
11/2 Cup Biscuit Mix

1 Cup Shredded Sharp Cheddar Cheese
2 Tablespoons Parsley Flakes
2 Tablespoons Melted Butter

Cook onion in small amount of hot fat until tender, but not brown. Combine egg and milk in bowl. Add biscuit mix and stir until just mixed. Add onion, 1/2 of cheese and parsley and mix. Place in greased 8-inch round cake pan. Sprinkle with remaining cheese and drizzle butter over top. Bake at 400  for 20 minutes or until toothpick inserted in center comes out clean.


CANTALOUPE NUT BREAD

1/3 Cup Shortening
2/3 Cup Sugar
1 Egg
13/4 Cups All Purpose Flour

2 Teaspoons Baking Powder
1/4 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Cup Mashed Ripe Cantaloupe, drained
1/2 Cup or More Chopped Nuts
1/2 Cup Raisins(optional)

In a mixing bowl, cream shortening & sugar. Beat in egg. Combine the flour, baking powder, baking soda & salt; add to creamed mixture alternately with cantaloupe until blended ( mixture will appear curdled). Fold in nuts. Transfer to a greased 8 x 4 x 2 loaf pan. Bake at 350 degrees for 55-60 min. or until toothpick inserted near the center comes out clean. Cool for 10 min. before removing from pan to wire rack.



CHEDDAR BAY BISCUITS

2 Cups Bisquick
2/3 Cup Milk
1/2 Cup Shredded Cheddar Cheese

1/2 Cup Butter or Marg. melted
1/4 Teaspoon Garlic Powder
Heat oven to 450 degrees. Mix Bisquick, milk and cheese until a soft dough forms. Drop by spoonfuls onto an ungreased cooking sheet. Bake 8- 10 min until golden brown. Mix butter and garlic powder. Brush mixture over warm biscuits before removing from cookie sheet.

CHOC. CHIP BANANA BREAD WITH GLAZE

1 Cup Ripe Bananas, mashed
11/2 Cups Chocolate Chip
11/4 Cups Flour
3/4 Cup Sugar   
1 Teaspoon Baking Powder
1 Teaspoon Salt 
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1 Teaspoon Nutmeg
2 Eggs
1/2 Cup Cooled Melted Butter or Veg. Oil
1/2 Cup Plain Yogurt or Sour Cream
1 Teaspoon Vanilla Extract

Preheat the oven to 350. Lightly spray a 9 x 5 loaf pan. Mash the bananas and sit aside. Mix flour, sugar, baking powder, salt , baking soda, cinnamon and nutmeg into a large bowl. Add in yur dry mix ings. In a medium bowl, wisk eggs, butter or oil, yogurt or sour cram and the vanilla. Stir in you bananas into egg mixture and then fold into dry mixture until combined. Spread the batter into the prepared pans. Bake for 55 minutes. Cool for 30 minutes in the pan and then turn out onto a rack to cool completely.

Glaze:
1 Cup Powdered Sugar
2 Tablespoons Cocoa
2 Tablespoons Milk
1/4 Teaspoon Vanilla
Pinch of Salt

In a bowl wisk all of this together and pour over cooled cake.

PEPPERONI PIZZA PUFFS

3/4 Cup Flour
3/4 Teaspoon Baking Powser
1 Tablespoon Italian Seasoning
Pinch of Salt 
Pinch of Red Pepper Flakes
3/4 Cup Milk
1 Egg, lightly beaten
1 Cup Mozzarella Cheese
1/4 Cup Grated Parmesan Cheese
1 Cup Pepperoni, cubed
1 Jar Pizza Sauce

Spray 24-cup mini muffin pan. In a large bowl, wisk together the flour, baking powder, italian seasoning, salt and red pepper flakes. Wisk in the milk and egg. Stir in the mozzarella, parmesan and pepperoini. Let sit for 10 minutes. Stir the batter and then divide the batter into the muffin cups. Bake until puffed and golden brown around 20 to 25 minutes. Heat the pizza sauce in the microwave and serve with the puffs. I use self-rising flour with these.

EASY DIPPING BREAD

1 Tablespoon Active Dry Yeast or one pack
1 Tablespoon Sugar
1 Cup Warm Water (105-115 F.)
21/2 Cup Flour, separated
1 Teaspoon Salt
2 Tablespoons Fresh Rosemary and some extra for top
Or you can use 1 Tablespoon Dried Rosemary
Or you can use 1 Tablespoon of Italian Seasoning
2 Tablespoons Butter, melted
Sea Salt

If you do not like rosemary you do not have to use it. But make sure you use the salt. Combine the yeast, sugar and water in a large bowl and allow mixture to become bubbly (5-10 minutes). Add 2 cups of flour,salt and whatever seasonings you are using. Turn out onto a floured surface and knead for around 10 minutes by hand adding additional flour if needed. Place dough ball into an oiled bowl and cover with a towel. Let dough rise until doubled, around 1 hour. Punch dough down and divide into 4 sections. Let dough rest for 5 minutes. Shape dough into oblong loaves and place on greased baking sheet. Brush with melted butter and seasonings. Let rise for 25 minutes. Just before baking sprinkle with sea salt. Bake at 400 for 12-16 minutes until golden brown.
