STEFENS TUNA SALAD

This is my sons Tuna Salad Recipe. Every time he come home he has to make some up for us. I just can't get it to taste like his even tho I use the same ings.

2 Medium Cans of Tuna
1/2 Small Onion chopped, if you like
3 Eggs, Boiled, chopped
4 Tablespoons Miracle Whip
1 Small Can of Chopped Black Olives, drained
1 Small Tomato, Chopped
Sweet Pickles, chopped or Pickle Relish to  your likeing
Crazy Mixed Up Salt

Drain the tuna, In a bowl put the tuna, onion, tomatoes. Then add the Miracle Whip. Stir good. Next add the pickles or relish and stir again. Now  add the olives. Stir. Next mix in the eggs so they will not crumble all to pieces. Then add the salt. The crazy mixed up salt to me is what makes this so good. Just work with this and adjust the ings. You may have to add more Miracle Whip. Keep ref. Serve on sandwich bread or regular crackers.

MAYRLIN'S SPAGHETTI CASSEROLE

1 Can Corned Beef, Mashed
1 Cup Milk
1 Can Mushroom Soup
Spaghetti, cooked and drained
1 Cup Cheddar Cheese
1 Tablespoon Prepared Mustard
3 Slices of Buttered Bread

Cook noodles and drain and sit aside.
In a bowl mix the mushroom soup, milk and mustard
Add 1/2 cup cheese
Add the mashed corned beef
Then add the noodles
Put in sprayed glass  baking dish
Tear up the bread and put on top of this
Add the other 1/2 cup cheese
Bake for 30 minutes on 350

Can add curtons on top instead of bread

HURRICANE CAKE

I ate this at a resturant a long time ago and had looked for years for this cake recipe and finally found one about 5 years ago for it.

1 1/2 Cups Sugar
2 Cups Plain Flour
2 Teaspoons Baking Soda
Dah Of Salt
2 Eggs
2 Cups of Canned Peaches with juice
1/2 Cup of Packed Brown Sugar
1 Cup Walnuts

Sift together the first 4 ings. together
Beat in eggs and peaches
Pour into sprayed 9x13 pan.
Mix Brown sugar and Walnuts together and sprinkle over batter
Bake 325 for 40 minutes
Spread iceing over cake while hot

Iceing:
3/4 Cup Brown Sugar
1 Stick of Butter
1/2 Cup Evaporated Milk
1 Cup Flaked Coconut

Combine the first three ings. in a saucepan. Cook for 4 minutes. Take off of stove and add the coconut. Watch or this will scorch easy. Punch holes in cake. Pour over cake when it comes out of the oven. I think this is better with two recipes of the iceing. This to me is what makes the cake.

CHICKEN AND MUSHROOMS

1 Or 2 Skinless Chicken Breasts
Onion Salt
Seasoned Salt
Pepper
1 4oz. Can of Mushroom pieces with juice
1/4 Cup Instant Rice
1/2 Cup Of Frozen Vegies

Season the chicken breasts with the onion salt and seasoned salt , watch the seasoned salt or it will be to salty. Then add the pepper. Use a 8x8 glass sprayed baking dish. Lay the rice on the bottom of the sprayed dish.
 Next add the vegies. Then add the chicken. Last put the mushrooms over top of the chicken. May take two cans. Put foil on top and bake at 350 for
1 1/2 hours or until chicken is done. You can also make foil packets out of this recipe.

ANGEL BISCUITS

ANGEL BISCUITS


5 Cups Self-rising Flour
1/4 Cup Sugar
1 Teaspoon Baking Soda
3/4 Cup Shortening
2 Envelopes Dry Yeast
1/4 Cup Warm Water
2 Cups Buttermilk, at room temp.

Sift flour, baking soda and sugar in a large bowl. Cut the shortening until
crumbly. Dissolve yeast in warm water. Add yeast and buttermilk to flour mixture and mix well. Spray 2 mini-muffin pans. Fill pans leaving some space for the biscuits to rise. Allow to rise for 20-30 minutes. Bake for 5 to 10 minutes on 350 until golden brown. Don't let burn on bottom. Serve with butter.

EDNA'S ROAST AND NOODLES

1 Small Beef Roast, cooked until done
Salt To Taste
1 Bag Medium Sized Egg Noodles
2 Sticks of Blue Bonnet Marg.

Fix the  roast until done. Cut into small pieces.
Fix the egg noodles, add a little salt to the water, not a lot.
Then pour the water off and add the butter to them. Start with one stick of butter. Just taste this. Add the roast to this you do not have to use all of the roast just to your liking. The more butter the better it is. You can also use chicken or steak to this instead of the roast.

LOU'S BUTTERMILK-VANILLA FRIED CHICKEN

My neighbor was telling me this new recipe for chicken she had fixed. She said it was real good. My mother-in-law said it was  good and crisp.

4 or 5 Chicken Legs or Thighs or Breasts
2 Teaspoons vanilla extract
2 Cups Buttermilk
Flour
Cornmeal
Salt and Pepper
Cooking Oil

Mix the flour and cornmeal together and set aside. Then mix the buttermilk with the vanilla and set aside.
Wash the chicken, then salt and pepper it.
Dip it in the flour mixture and then put it over in the buttermilk mixture and fry in a skillet on medium until done.
Make sure you put it in the buttermilk mixture last. Watch or it will scorch easy. Have not made this yet but I am going to try it.
