SO GLAD TO BE ALIVE

After going down to one of my sons fave places at Chapel Hill,Tn. Little did we know on the way back that we would almost get killed on the way back home.
We had went out to one of his friends homes to get some farm fresh eggs and was on our way back home and getting ready to cut off of the exit when a lady in front of us must have missed her road and stopped in the middle of the exit.
There was a semi-truck behind us and one on the side. He could not get in the other lane to swrive and miss her.
So it looked like we were going to take the whole side of her car out but thank God there was just enough room to squeeze by and not let the semi-truck hit us on the left side. I still don't know how he did it.
Well so much for our eggs as most of them got broke where he had to put on his brakes so hard. I just thank God that we are still alive today......

SIMPLE DIP

1 Lb. Sausage
1 (8)oz. Box Cream Cheese
1 Can Rotel Tomatoes, mild, not drained

Brown the sausage in a skillet. Drain off grease. Add the cream cheese, stir to melt. Add the Rotel .Stir. Let simmer then serve. (You can also put this in a slow cooker to keep warm).

CHOCOLATE PISTACHIO BUNT CAKE

1 Box White Cake Mix without the pudding
1 Box Instant Pistachio Pudding Mix
1/2 Cup Oil
1/2 Cup Water
1/2 Cup Orange Juice
4 Eggs
3/4 Cup Chocolate Syrup

Mix together the cake mix, pudding, oil, water, orange juice and eggs and beat with mixer on low for 30 seconds and then on medium for 2 minutes. Pour 3/4 of the batter into a greased , floured 10" tube or bundt pan. Into the remaining 1/4 of the batter add 3/4 cup chocolate syrup. Mix and pour over top of the other batter and then bake on 350 for 50-60 minutes. Cool on wire rack. Remove from the pan. You can then sprinkle the cake with powdered sugar or make a good ole chocolate glaze, which I love with this for the frosting.

Chocolate Glaze:

2 Cups Powdered Sugar
2 Tablespoons Cocoa Powder
1 Tablespoon Butter or Marg.
1/2 Teaspoon Vanilla
2-4 Tablespoons Milk

In a small bowl, combine powdered sugar, cocoa and butter. Add vanilla & add milk gradually to achieve desired consistency ,stir until smooth. Pour over the cooled cake.

ORANGE AND STRAWBERRY MUFFINS

3/4 Cup Milk
1/2 Cup Oil
1 Egg
1 1/2 Tablespoons Orange Zest
2 Cups Self-rising Flour
1 Cup Fresh Strawberries, chopped
1/3 Cup Sugar

Pre-heat the oven to 400. Spray a 12 cup muffin pan or line with cup cake liners. Mix the milk, oil, orange zest and the egg in a medium bowl until blended. Stir in the flour and strawberries and sugar until moistened.
Pour the batter into the pan and then sprinkle the pecan streusel mix over the top. Bake for 15 to 20 minutes. Do not let burn on top.

Pecan Streusel Topping:

1/2 Cup Pecans, chopped
1/2 Cup Brown Sugar
1/4 Cup Flour
21/2 Tablespoons Melted Butter
Mix all the ingredients together until blended and then sprinkle over the muffin mix.

SPRING BLUE BERRY CAKE

Are you like me just love blueberries. They are so good for you. When I buy a box I just can't stop eating them. They are almost like eating chocolate to me. lol. This cake is so good and it stays moist, also if there is any left. You can use it with a pre- bought angel food cake or if you want you can bake a angel food cake or a white cake mix and use the blueberry filling between it .

1 Angel food cake pre-bought or baked or a White cake mix , baked.
1 (8)oz. Box Cream Cheese, softened
1 Cup Powdered Sugar
1 Can Blueberry or Cherry Pie Filling
1(8)oz. Tub of Cool Whip

If baking cake let it cool first and if store bought then just cut the cake into 4 layers. Beat the softened cream cheese and powdered sugar together. Then add the canned pie filling and mix well. Fold in the cool whip. Spread between the layers and on top of the cake. Ref. Make sure you keep this ref. You can also use the filling on Town House or Ritz crackers as a appertizer if you do not want to use it on a cake.

'WAVE'' EVERYBODY START WAVING

Wave, wave everybody, wave now what are we waving at. lol.

While going down thru Nashville my crazy son had to pull one on me and his sister. He was in the back seat and started saying wave, wave.

So what did we do start waving. Now we looked like a bunch of fools going down the road waving at what? I ask him what are we waving at.
There was no one we knew beside of us on the interstate so what were we waving at.
The wave pool, a place for the kids to go play at was on the hill as we went by. lol.

He was in the back seat dyeing laughing and us up front waving to beat ninety. I guess the ones going by us thought we were drugged or drunk one. He got a good one on us.
He said they pull that on everyone. So if you are going down the interstate before you get to opry mills just start waving. Thank god no one knew us. lol.

2 Cans Shoe Peg Corn,drained
3-4 Chopped Green Green Onions.
1 Cup Hellman's Mayo

Mix all ings. Together and ref. Serve cold.
