East 80 London Ky Yardsale Hot Dog Chili

While going to the London yard sales that they have every Labor Day weekend we went to a area church who was selling hot dogs along with their yard sale items. Let me tell you this was some good hot dogs so the lady very kindly gave us her chili recipe. This really surprised me as most people do not like to give out their recipes. Me, I am glad to give anyone a recipe that I have as that is just part of being kind to people and part of being southern. So here is her recipe for the chili. If you do not like your chili sweet you can cut back on the sugar or leave it out. Me, I like the sweet taste of it as it is very good hot dog chili.

From KEPHANIE J.

Ingredients:
  • 3 LB.GROUND CHUCK OR GROUND BEEF
  • 1 LARGE ONION
  • 1 CAN TOMATO PASTE
  • 1/2 CAN WATER
  • 2 TABLESPOONS CHILI POWDER
  • 1/4 CUP OR LESS WHITE SUGAR, (REGULAR SUGAR)
  • 1 (32oz.) BOTTLE KETCHUP
Directions:

Boil the onion in water until transparent and then drain. Set aside. In a large kettle put the ground chuck or ground beef in water and boil until it is done and then drain this. Mash the meat with a potato masher or a hamburger masher from Pampered Chef. Put the beef and onion back into the kettle and then add the 1 can of tomato paste and the 1/2 can of water and let this simmer for 15 minutes.Next add the 2 tablespoons of chili powder. and the 1/4 cup of sugar along with the (32oz.)bottle of ketchup. Stir good and let simmer for 30 minutes.

Best if this is made in a crockpot.
